Barbie's Tuna Salad
It's always great to find a recipe that is wonderful as written. This is one of those recipes. You can also change it to adapt to personal taste, and it is still as great as the original. The second time around my changes were few - I like to reduce the mayo and add a little sour cream. I also used finely minced Vidalia onion and just 2 Tbsp. pickle relish. Wonderful! The next time I may use Vidalia onion relish instead of the fresh onion and pickle relish. I can't wait to make it again!

Mozzarella-Stuffed Pesto Turkey Meatballs
This is a great recipe. I used 1/3 of the mix for meatballs and put a chunk of Kraft tomato basil string cheese in the center of each. The other 2/3 I mixed in shredded mozzarella and baked it as a turkey loaf. We had the loaf for dinner and I froze the meatballs (after eating one to try it out). I think I'll use the meatloaf mix the next time and try it as turkey burgers.

Easy Weeknight Tuna Pot Pie
I made a few changes, but only because of the limited ingredients I had on hand. I used 1 can of drained lima beans and 1 can of drained kernel corn instead of the mixed vegetables. I also used a couple slices of pepper jack cheese torn into pieces and a little shredded Mexican cheese blend. I used a Pillsbury pie crust for the top which means I had to bake it a bit longer for the crust to brown. My hubby loved it so I may not try the original recipe and just keep making it with my changes. However, I wouldn't have made it at all without the original recipe to use as a base. Thanks for a keeper.
