Indian Vegetable Bhaji

I absolutely adored this dish! Not the usual cream base, but oh so spicy and flavorful, and beautiful colors as well. I cheated and used frozen diced potatoes because it's all I had on hand, but they worked perfectly. Will definitely make again, next time with some raita and naan on the side. Yum!

Lime Cilantro Cauliflower "Rice"

Great idea! I've made this three times in the past two weeks and tweaked it to our taste... Cooked it closer to 3-5 minutes depending on the shallowness of the dish, longer made it too mushy. Left out the butter too, just didn't need it. The first time we had it as above but added sliced green onions, diced red bell peppers, and cotija cheese... Yum! Looking forward to trying a Thai version next, with hints of lemongrass and ginger. This one goes into the rotation!

Super Easy Salmon Cakes

Excellent! I had leftover salmon and this was the perfect recipe. Decreased the crumbs a bit, and then used crumbs in the mixture and "rolled" the cakes in panko. Added some diced red bell pepper and dill to the mixture, and voila! Delicious. The dipping sauce I used was a mixture of mayo, creamy horseradish, tartar sauce, and dill, with a splash of lime juice. YUM!! Great base recipe, and love the baking aspect!

Pork Chops Deluxe

Mouthwatering! Due to what we had on hand, I modified it a bit and it still tasted delicious. Used four pork chops, but kept other measurements the same. Sprinkled chops with Montreal Steak to season before browning, so I didn't have to add salt later. Had no mushrooms, so used mushroom pilaf instead of plain rice. Also added about 1/4 cup white wine in with water/soup; it added a piquant, sweet-tart sort of flavor that really helped accentuate the spicy brown mustard I used... yum! Will *definitely* make again and again; thank you!!

Taco Quiche

Yum! This recipe is tasty as written, and very versatile. The second time I added one egg, used only 1/2 lb of taco seasoned meat, added about 1/2 cup of additional leftover veggies (mushrooms, red bell pepper, some pureed spinach & broccoli), used "fiesta" seasoned shredded cheese, and replaced half the milk with evaporated milk. I also added some ground flax seed and about 2 Tbsp of salsa, and mixed the cheese in instead of topping with it. Delicious!

Oatmeal Waffles

Excellent! These tasted healthy and filling, but still delicious-- not always an easy feat. The second time I made these, I subbed 1/2 cup of wheat bran for flour, and 1/4 cup of milled flax seed for oats. Added 1 tsp. of vanilla and halved the sugar, and we liked it even better. Thanks!

Antojitos Minis

Perfect! I've also used different types of tortilla-- the flavored wraps (green, red, wheat) with excellent results. They freeze beautifully and reheat well, so these are perfect to make up ahead of time for the holidays or for parties. Served with Mexican sour cream (crema) and fresh salsa as toppings... and fresh chopped cilantro on the side, yum!

Spinach and Feta Pita Bake

Delish! I've also subbed gorgonzola and even goat cheese depending on what was in the fridge, and it was great both ways. Added whatever veggies were on hand and voila! Instant snack. They freeze beautifully as well, and re-heat perfectly. Thanks!

Spinach Triangles

Awesome recipe! Quick, easy, and yummy. I like that you can still taste the flavor of spinach and it isn't disguised by loads of cheese. I did add a little bit of dill weed and oregano to the mixture. Served these alongside ham and they disappeared. Even my toddler loves them!

Apple Butter Ham Glaze

Delicious! Before baking the ham, I studded the skin with whole cloves (about 15). When I made this glaze, I had to use cranberry instead of orange juice because that was what we had on hand. The ham smelled divine and tasted even better, and everyone gave rave reviews. I think I found my holiday ham glaze recipe!

Gramma's Apple Bread Pudding

Delicious, even without the vanilla sauce. The second time I made it, I was craving it but only had a variety of leftovers on hand. I used leftover Apple Betty and leftover apple crumble, added some cubed focaccia and chopped pear, and then threw in raisins, dried cranberries & dates, and chopped walnuts. I dropped the sugar and spices down a bit to account for the already seasoned leftovers, but kept the milk, butter, eggs the same. YUM! I know my second effort sounds very different from the original recipe, but it just shows that this recipe is a great base and adapts wonderfully to additions and changes. Thank you!

Mini Cheesecakes I

Awesome! Every time I bring these, people ask what bakery I bought them at. The recipe is also very versatile, and allows you to top with whatever pie filling (or fresh fruit) that you like. I've used cherry pie filling, fresh raspberries topped with a glaze made from heating up raspberry jam, blueberry filling, strawberries with strawberry glaze, etc. Perfect every time!

Cheeseburger Soup I

Wonderful stew-like soup. Every person I've served it to has loved it, but when they hear the name they're a bit put off... so I end up just saying it's soup. :) Very versatile recipe, so I often change it up and add different veggies or cheeses, with great results every time. Perfect for cool fall or winter days.

Sweet Onion Pie

Delicious! I did have to make some substitutions due to what was in the cupboard, but the basic recipe was perfect. I used Italian seasoned panko and regular bread crumbs instead of the crackers, and it made a great crispy crust. I also added in some leftover diced ham and mushrooms to make a complete meal, and mixed a few cheeses in (provolone and parmesan) to help layer some flavors. Everyone raved about it! Thank you :)

Roasted Garlic Bread

Unbelievably good! Took them to a picnic where several other people brought different versions of garlic bread, and these went first. Excellent flavor, not so garlicky that it's painful, but just pure perfection. Yum!

Blonde Brownies I

I was nervous about these ingredient proportions from the beginning, and should have trusted my instincts. We actually had to toss out most of the pan after trying the brownies, because they were overly sweet and way too rich to eat. Disappointing and felt like a waste of ingredients.

Excellent flavor-- and just the right ratio of coffee liqueur to vodka. For myself, I like a splash of milk on top, but my lactose intolerant husband likes it as is. Also great if you use vanilla vodka... yum!
