Puffs

Whoo! Hot! I love them! Used 355 degree oil. Will increase temp to 375 per another reviewer. Held well in low temp oven so I could make before guests came. My 10 yr old daughter (who doesn't like to cook) had a blast helping fill and seal them. Great time together and not a single one burst. Per another review, DO NOT use old/frozen wraps. Too soggy. Made 48 total. Oh, and we called them Chinese Jalapeno Poppers so the guys at the poker game would eat them. "Puffs" was too foofy for them. :)

Chantal's New York Cheesecake

Very light and fluffy. Very good. It produced a 1" deep split from one side of the pan to the other. Right down the middle. The worst cheesecake crack I have ever baked. hmmmm. Just cover it with something yummy! :) 1/7/09 update: I cut the recipe in half, used the same amount of crust and pan, cooked for 50 min and it turned out just as good and fluffy as the whole one I made. less guilt for the same size slice!!!

Rice Cereal Energy Bars

WOW! These are kicked up rice krispie treats. Perfect amounts of all ingredients. Can mix up the dried fruit combos but otherwise don't change a thing. The kids are gobbling them up!!! Thanks for the recipe. What a hit. 3/16/10 Update: tried to cut down on the c.syrup and sugar and use applesauce in their place. Don't. Won't hold together. Should have taken my own advice and stick to the recipe!!!

Florentine Artichoke Dip

Tried to prepare the day before and bake for the superbowl the day of. Too gunky and sticky. I guess don't try to prep ahead? It's very thick compared to some other restaurant recipes I've tried in Colorado.

Perfect taste! Right amount of tomato. Wonderful broth. Added all the seafood at once. Clams were under cooked and the cod broke up into little flakes. Next time I will put the parsley in the last few minutes of simmering. 30 min made it gray. Then I will put the clams in about 5 min before the rest of the seafood. Once the rest of the seafood looks 1/2 done I will add the cod.

Day Before Mashed Potatoes

I was a little worried about the texture as the cream cheese and sour cream made somewhat of a glue-like texture. HOWEVER, they were a HIT! After baking the next day they came out fluffy. So easy to pop in the oven rather than fumble around minutes before serving the meal. Thank you!

Jalapeno Chicken II

Very good but I'll let my husband cook it next time as I burned the bacon terribly and ruined the whole presentation. Chicken came out perfect after 8 hours of marinating in zesty italian dressing. Great combination of flavors. I think I will try to slightly roast the jalapeno's on the grill next time to make them less crunchy. They didn't really cook in the center and slipped around when trying to cut. Will try again with the help of my husband! Thank you! (Worthy of serving to friends this summer with practice)

Slow Cooker Sausage with Sauce

I really liked this but it was too soupy. I think I would cook longer than 6 hours to evaporate some of the liquid next time. Will try again. (Tried chicken sausage - the family didn't know the difference) Should I cut up the links when serving?

Vegetable Chowder

Using up broccoli and cauliflower from holidays. Omitted celery, red pepper. Doubled broc., caulif., and onion. Decreased carrots to handfull for color, and substituted cheese with velveeta to be able to reheat at work. Tastes wonderful - even with all the changes. Only suggestion: decrease simmer time from 20 to 10 min or so so veggies don't turn to mush when reheating. 3/18/2007: Made again using up veggie tray from last night. Used pre-shreaded cheddar. AWFUL! The powder it was packaged with to keep shreads from sticking together kept the soup from being creamy. Gritty tasting. Should have used my own advice and gone with the velveeta!
