Clam Chowder

This was delicious! I was searching for a recipe similar to my sister's since I couldn't find it, and this was quite close, so I thought I'd give it a try. It was hard for us to believe, since my sister is an amazing cook, but this was actually better than hers! I left out the mushrooms because I don't like them, and replaced one can of the cream of mushroom with cream of celery. I used 1/4 cup white cooking wine and 1/4 cup chicken broth, I added two cans of tiny shrimp (drained) at the end with the clams. My husband, who is a serious whiner about anything soup-like raved about this chowder! This recipe will be a keeper for this family for sure!

Cabbage Rolls II

I couldn't find extra lean beef at my local store, so I ended up using Jennie-O lean turkey. I added minced garlic, and next time will add more seasonings to the mix because it needed a touch more, but still good! ***Update: Do not listen to the review about freezing the head of cabbage! The first time I made this, I just quickly cooked the leaves in a small amount of boiling water, and it worked just fine, but this time I decided to try the freezing thing. It's a bust. Do you know how long it takes a head of cabbage to thaw? The first couple leaves were fine, but the rest wouldn't peel off without breaking, so I had to steam the whole head anyway, and STILL left leaves toward the middle that were still partially frozen, and wouldn't peel off properly. I ended up having to toss some of the mixture out because I couldn't get enough useful leaves out of the head of cabbage. Just steam them from the beginning. Freezing is definitely not worth it.

Dirt Cake II

This recipe is a pretty simple fix. Everyone keeps complaining about the measurements being wrong, but no one really offers a solution. Instead of 3 cups of milk, I only used 1.5. You could probably safely use 2 cups though. My mixture was pretty thick, but we liked it that way. Also I only folded about 4 ounces of whipped cream into the mixture. I wanted the flavor to be rich. It turned out good, thick, and creamy!

Apricot Brown Sugar Ham

I followed these measurements exactly, and it turned out perfectly! I needed the oven for other things though so I put my ham in the crock pot 3 hours on low. It was salty and sweet AND juicy. :)

Monkey Bread I

This monkey bread is delicious!! I couldn't find 12 oz cans of biscuit dough, so I used two 16 oz cans. so as not to be wasteful, I also dumped the remaining sugar and cinnamon mixture from the bag into the melting mixture of butter and brown sugar. I never use raisins because I don't care for them, but this recipe is good with either walnuts or pecans.

Pesto Grilled Cheese Sandwich

This was the best grilled cheese sandwich I've ever had! It was nice to be able to doll up a sandwich that the kids would eat too. It tasted like bruschetta on grilled cheese! AMAZING!

Chicken and Red Wine Sauce

This chicken comes out perfectly delicious and tender every time! I've made this recipe three times so far, and it's a family favorite. I usually use more wine and it calls for, but that's really only because I don't measure...just pour. :) Great recipe!

Carrot Cake III

This carrot cake is super delicious! Follow the advice of the top review and you won't be disappointed! I also substituted 1/2 cup of the oil with applesauce, added an extra tsp vanilla, used 1 cup white and 1 cup brown sugars, and added a tsp (or more) of cinnamon along with a little nutmeg and touch of ginger. I did not add pineapple as that review suggested only because I don't care for pineapple. The frosting is perfect! You can adjust the sugar depending on your sweet tooth, but the measurements are just fine!

Slow Cooker Texas Pulled Pork

This is perfectly delicious! It is a great southern style pulled pork, just like I used to get in North Carolina. I cooked mine on low for about 8 hours in the crock pot. It smelled great almost instantly! Thanks for sharing!

Cheese Lover's Chicken

This was a good recipe. My husband and children loved it! I had difficulty with it as it truly is for cheese LOVERS. I thought I loved cheese, but not quite enough. It was good, but too much for me. I'll definitely make it for the family again though!

Bermuda Spinach Salad

This recipe as is, is ok. I think the 2 lbs of spinach was meant to be 2 bags, but even that seemed like a lot. I used approximately 12 oz of spinach. The dressing had a nice flavor to it, but WAY too much onion, and I love onion! This dressing burned my nose and eyes! I suggest using a very small onion or maybe only a quarter of a larger one. Also, I only used 1/2 cup of sugar and it was still super sweet. Maybe only needs 1/3 cup.

Chicken Asparagus Roll-Ups

These were quite good! My toddlers at them up! I followed the recipe exactly, only I didn't have chicken breast halves (never been able to find them anywhere), so pounding them still didn't make them very thin, and they took nearly an hour to bake. But they were still delicious and perfectly tender!

Italian Peas

I am giving this 5 stars because I HATE peas, and this recipe allowed me to eat them. :) My toddlers loved it as well (but they love peas, so that's to be expected). I used a 12 oz bag of peas because that's all I had, but I didn't need to adjust the recipe at all. I used one medium onion. When I added the peas they didn't need to cook a full 20 minutes. I removed them from the heat at about 12 minutes and kept them covered for another 10 minutes (just waiting for the rest of our dinner to be ready). They were done through with a little crunch left in them. Great recipe!

Slow Cooker Pork Chops II

This flavor was definitely something different, strong but good combination. My two toddlers gobbled it up. I put in minced garlic and onion powder instead of garlic powder. I put the chops in the crock pot at 9:30 am on low. At 2:30 pm I added one cup of brown whole grain rice, and by 5 pm the rice had absorbed the juices nicely. It gave the rice a nice flavor, and the pork chops were the most tender I've ever made. Good solid recipe. :)

Hearty Vegetable Lasagna

This was much better than I expected! I don't really like mushrooms, so I cut that back to 8 oz. So glad I did, because even 8 oz of sliced mushrooms is a lot! I added zucchini, spinach, and shredded carrot. I added some parsley and a touch of salt to the ricotta mix, which, by the way, is great! I will add mozzarella to my ricotta mix in any lasagna I make from now on. I love a cheesy lasagna! Great recipe, very versatile! p.s. toddlers ate it up...great way to hide some veggies. :)

Balsamic Chicken with White Beans and Spinach

I was please with how easy this meal was to make, and it really is a whole meal. You don't need anything else to go with it! My two toddlers seemed to like it, and finished their plates. The chicken was quite tender. For me, the flavors were a little strange. It was alright, but not one of my favorites.

Black Bean and Corn Quesadillas

These were amazing! This is a very versatile recipe. I've made them twice now, and the first time I didn't have all of the right things, so instead of black beans, I had to use red kidney beans, and I didn't have salsa, so I used taco sauce. I used a full 16 oz bag of corn to thicken it up. Received rave reviews from my toddlers, and our vegetarian friend!

Quick and Easy Mexican Beef Chili

This was so good and SO spicy! If you're not sure if you can handle the spice, remove the seeds of the jalapeno peppers before adding to the chili, because a little bit goes a long way! I used 1.3 lbs of beef because that's just the way the store packaged it. I only used about 3 cups beef stock. I forgot to get two cans of crushed tomatoes so I used one can crushed, one can diced, and one can sauce. I also added some chipotle chile pepper in with the chili powder. There were tons leftover, so this makes quite a bit! As a side, I baked whole wheat tortillas, by spraying both sides with olive oil, cutting up into triangles with pizza cutter, and baking at 425 for 5 minutes. They made great healthy chips to go with it, and absorbed some of that spice!

Russian Tea Cakes I

These are delicious! I followed the recipe exactly but added about a 1/2 tsp almond extract with the vanilla. I did not have a problem with it being crumbly at all. They molded perfectly into balls, even with my children helping! So I would not add any milk. I've made that mistake with shortbread recipes before, and they turn out tasting like baked milk. eww...I let mine cool only 5 minutes and then rolled in the sugar, and it doesn't need a second roll. The sugar stuck perfectly. I might try this with coconut sometime too! Thanks for a great recipe!

Robbi's M&M Cookies

These cookies are amazing! My husband said they might be his new favorite cookie, and I'm always making different kinds of cookies. I took the advice of some reviewers and replaced the cup of shortening with 1/2 cup butter and 1/2 cup butter flavored shortening. When I tasted the batter I was nervous they would be too buttery, but they came out perfectly. They taste just like something you'd get from Mrs. Field's Cookies or the Cookie Company! I found 9 minutes to be a perfect baking time (find that to be true for most cookies), and then I left them on the cookie sheet for about 4 minutes. Thanks for the great recipe!
