Chicken Potpie

I finally did it! I finally made a chicken pie! I followed the recipe exactly and used refrigerated pie crusts. The recipe was easy and the outcome was delicious. I had some leftover pie crust scraps and filling so I made a little pie in a small ramekin. It was cute and extra tasty with a greater ratio of pie crust to filling.... Next time I will make many individual pies instead. I loved that this recipe made an extra pie for freezing.

Kale and Banana Smoothie

Fantastic smoothie! I keep a bag of chopped frozen bananas to use in my smoothies for the chill factor. I also use agave nectar since that is what I usually have on hand. Kale is super nutrient dense!

Butter Bean Burgers

Very good. I followed the recipe exactly. I let the burgers hang out in the fridge for about an hour before cooking - and they held together very well. I will make them again without a bun - they are tasty all on their own.

Old Bay® Shrimp Salad

This is definitely the taste I was looking for in a shrimp salad. But let me warn you all out there - when making your sauce try it first with 1 teaspoon of lemon juice and taste - I found 2 teaspoons too much. The Old Bay could be cut down by 1/2 teaspoon too. I will make again!

Peanut Butter Haystacks

Very simple and suprisingly addictive. Sweet, salty and crunchy. My husband eats the entire batch within a day. Honestly, I can't make it often because it is dangerous to have around....you know what I mean?

Authentic Thousand Island Dressing

This dressing is delicious. I am not an egg fan though. If you love eggs in your salad you will flip over this recipe. I now make with out mixing in the eggs and it is perfect for me.

Baby Carrots with Dill Butter

Excellent way to prepare carrots. Like others have said - watch the amount of lemon juice. Start off with much less - but it definitely plays an important role in the overall flavor. I used dried dill to taste. Very very yummy - and I usually avoid cooked carrots!

Special Deviled Eggs

Well, these eggs were not bad. But, they were not tasty like I had hoped. The horseradish was way too pronounced and I used half the amount the recipe called for. I like horseradish but do not think it pairs well with deviled eggs. I will stick with the traditional version - but I'm glad I tried something different.

Manicotti Alla Romana

Outstanding - you must try this one! I used sausage instead of the beef - but other than that followed the directions exactly. The white sauce was so delicious I would have it ate it like soup if I didn't have any self control! I don't know why everyone complains about it taking so long - that's the fun part to me!

Mediterranean Chicken with Eggplant

Very good. I did not have tomato paste so I used about a cup or so of jarred marinara and eliminated the water. I also added a handful of sliced marinated green olives - worked very well. I love eggplant - delicious dish.

Barbie's Tuna Salad

Try this recipe. Don't be afraid. The curry is subtle. I have been loving tuna salad sandwiches forever - this recipe has brought me so much joy! I am going to try this with chicken next. C'mon, try it!

Flatlander Chili

This is the best chili we have ever had. Follow the recipe exactly. I have also used canned crushed tomatoes and canned chopped tomatoes - also terrific (more substantial). You must try this chili!

It's Chili by George!!

After serving this to a group of people I received several comments like "this is the best chili I have ever had!". I replaced the tomato juice and sauce with a combination of canned crushed tomatoes and diced tomatoes - otherwise I followed the recipe. Great tip - try the "Fire Roasted" style of canned tomatoes (Muir Glen is the only brand I have ever seen)- the flavor rocks!

The Best Chicken Soup Ever

Like others I was skeptical of adding boullion cubes and powdered chicken soup to what could be a nice natural soup. But, it did boost the flavor in a wonderful way - and boy did I get the compliments. When I simmered my chicken parts I added the usual celery, carrot, onion, and some herbs to make my own broth. Try it - you will be suprised!

King Ranch Chicken Casserole III

Very good. I used tortilla chips and they worked great. Like others I did not use the broth, however, I did pour an additional can of Rotel tomatoes over the top of the casserole. Since I used the tortilla chips I think I needed the additional moisture and it worked beautifully.

Red Salmon Pate
