About this Cook
I have been married for 19 years to a wonderful man who has gained a few pounds over the years because he loves my cooking! I also have 2 beautiful children that are very picky eaters, so at time I cook 2 meals a night.

Cheesy Ham and Hash Brown Casserole
This was excellent! My husband couldn't quit eating it and was disappointed when it was gone. Only change I made was to use more cheese...actually double. I also bought the Ore Ida Hash Browns that had onions and peppers in them. Gave it a great zing and just a little extra flavor. This will be a favorite for a long time I do believe! Thanks for sharing!

Broccoli, Rice, Cheese, and Chicken Casserole
This was the best casserole that I've made in a long time! I made almost according to the recipe except for the following two things: I omitted the butter (couldn't see how it would be necessary except for adding more calories) and I used boneless chicken breast, instead of canned, that I cooked first on the Foreman. My husband couldn't get enough of this, he wants me to make it again next week. Bravo on this recipe!!
