Napa Cabbage Salad

Roasted Red Pepper Lasagna

Reviewed: Feb. 9, 2012 I particiapte in a Vegetable Co-op and had lots of tomatoes that were about to go bad. So I used fresh tomatoes instead of canned. The result was okay (a little watery and lacking in flavor. I will try this again with the canned tomatoes next time.

Asparagus-Stuffed Potatoes

I that this was a great recipe! However, my baking potatoes were small and when I tried to spoon out the potatoe the skins fell apart. So I put it all in a cassarole dish and topped it with cheese. Worked like a charm!

French Toast Casserole

I give this recepie 5 Stars because my husband gave it 5 Stars and he never rates anything that high. I used half and half instead of milk because I had some that was about to go bad and half a left over french bread loaf. I had to toast the bread in the oven a few mins to dry it out, but over all it worked perfect. The middle of my cassarole was a bit soggy because I ran out of time and could not cook it the full 50 mins. However, my husband fondly refered to it as French toast pie since it was cripy on the outside and custardy on the inside. So the verdit is in folks soggy (custary) or baked all the way. This recipe is a winner.

Cucumber Sunomono

This was an excellent way to prepare cucumbers! I will be using this again. I also added celery since I had some that was about to go bad and it blended nicely. I think it would also be great with tomatoes added. Add some feta cheese and it would make an excellent side for greek dishes.

Japanese Okonomiyaki

I gave this two stars...However, I think I chopped my cabbage two thick. I am going to try it again and make sure to shred my cabbage on the thin and small side. I think that will improve the recipe greatly. I will update my review accordingly.

Pesto Tomatoes

EASY AND GOOD! I used cherry tomatoes and didnt bother scooping out the seeds. I just cut them in half and toppd them with the pesto and cheese. WONDERFUL!

Tuscan Soup

YUM! I had to use what I had on hand so I used..Johnsonville italian cheese sausage, canned new potatoes and peas (instead of spinach). I turned out GREAT!
