Stuffed Green Peppers

I like regualr stuffed green peppers, but these blow the meat-filled ones away! I did some modifying though...I used black beans with chili and cumin spices in it, Hunts tomato sauce with basil, oregano, & garlic, and instant brown rice to save time. I also used only 1 slice of cheese (halved for layering) per pepper to cut calories. It turned out wonderful. A dallop of sour cream on top before serving enhanced the flavor even more. Thanks for the great recipe!

Pineapple Cheese Ball

I have made this cheeseball twice. It always gets great reviews by those who eat it. I recommend NOT draining the heck out of the pineapple though. It loses a lot of flavor that way. It is a little wet/runny right after you make it, but after sitting in the fridge for a few hours or overnight it's just fine. Thanks for the recipe!

Grammy's Overnight Lasagna

Wonderful! Only things I did different was used 16 oz. of cheese, added an egg to the cottage cheese, and added some dried basil and a little minced garlic while cooking the meat. I'm sure the sauce plays a huge roll in the flavor. I used Hunts Meat Sauce. It was perfect AND is only $1 a can! I used a 8x11 pan so everything was snug and stayed together. Just a note: in the past I've used low-fat cottage cheese and it turns watery. This time I used the full-fat small curd and the flavor and texture were perfect. I also used no-boil lasagna, but I always soak them in hot water for about 40 minutes before using them. Just a little tip I've heard along the way and it really does ensure they cook through. NOTE: The Oven-Ready lasagna noodles at Walmart are under $1.50!

Campfire Foil Onion

This is an awesome recipe! I've made it while camping and at home in the oven. The recipe is great as-is, but even better if you add a beef boullion cube in the center along with a few drops of worcestershire. It tastes like french onion soup! Great served with steak.

Mini Cheesecakes I

Took these to a party yesterday and everyone loved them! They were really easy to make and taste great. I used the new Mini Nilla Wafers and they fit perfectly inside the mini cups! I baked them in a water bath and used the syrup part of the cherry pie filling to put on top..not the cherry itself because I don't like them personally. Be sure to read the Cheesecake Tips before making. Since these are tiny you do not want to leave them in the oven to cool. Very good recipe...thanks!

Authentic Cincinnati Chili

I'm from Cinci and Skyline is my fave. No recipe will ever match the real deal, but this is very close. I used 1 t. ground allspice since I don't have the berries, 2T cocoa powder instead of real chocolate, and cider vinegar instead of regular. I didn't find it necessary to refrigerate to get the fat off. Using 93% lean hamburger, there wasn't any fat to speak of, and what little there may have been would've only enhanced the flavor. I did have to keep adding more water as it cooked. This recipe was just a tad more meaty than Skyline's. Theirs has a bit more water/grease for saturating the oyster crackers! It is absolutely necessary to finely shred mild cheddar cheese right before serving. The pre-packaged shredded cheddar isn't soft enough. Also, must serve with oyster crackers. One last note: make sure your dog doesn't eat any plate leftovers that go in the garbage. Gives them serious diarrhea. Guess it's not much different than getting some Skyline after drinking all night, LOL.

Easy Homestyle Green Beans

So easy & very good! Tastes like Grandma's beans she'd cook all day long. YUM! I had to more than quadruple the recipe for the party I was serving them at. I would suggest reserving the liquid from the cans of beans and then adding in what you feel necessary. Mine were a bit soupy.

Savory Tater Tot Casserole

Not a bad recipe with some additional ingredients. Tater tot casserole is what it is. It's never going to fabulous! But, this recipe is pretty good. This recipe wouldn't have been as good had I not added some minced garlic, 1/2 packet onion soup mix, a splash of worcestershire, a sprinkling of onion powder, and a handful of shredded cheddar. I cooked my meat with the onion like others did then baked it for 50 minutes. Note that the recipe calls for a 19 ounce can of soup. I'm sure many people overlooked that and bought the usual 10 ounce can like I did. Luckily I had a can of cream of mushroom soup on hand to add. All in all, it was a nice way to get my toddler her beloved tater tots along with some veggies and meat.

Yin-Yang Salmon

BAD BAD BAD. I don't know how this gets such high ratings, unless the secret is in what brand of hot sauce you buy. I used Louisianna Hot Sauce and all I could taste was that, along with a fishy taste now and again. My fish turned out kinda mushy too and I even cooked it for 30 minutes. Yuck.

Angel Chicken Pasta

Loved it! I doubled the sauce ingredients, except for the seasoning, and added a small can of mushrooms on top. Used chicken broth instead of wine. You should most definately double the sauce!! I also cut each breast into 4 big chunks to ensure it cooks through, and is easier to serve. It's amazing leftover too..the sauce thickens. I agree with another reviewer that said she wants to drink the sauce! I freakin' love this recipe!

Pot Roast Dips

Yummy! I used beef broth instead of water, but left everything else the same. Toasted the buns w/ cheese on them in the oven, then added meat. I do wonder why this recipe states that it would make 12 servings though. I used a 1.4# roast for just my husband and I, and it made just one large sandwich for each of us.

Creamy Cranberry Salad

Really good and easy. I totally forgot to add the cream cheese to the whipped cream, but it still was wonderful! I may just make it that way next time too. I tried shredding my Red Delicious apple, but it wasn't working too well, so I diced it up real small. I used Raspberry jello. I think Cherry would be great too.

Spaghetti Sauce II

Don't know what all the raves are about. I didn't find this any better than my usual $1 can of Hunts in which I add hamburger, onion, and other spices to. Won't make this again. It's not awful, but isn't stellar either.

Oregon Salmon Patties

I've been making salmon patties for years, and thought I'd try a new recipe. This recipe is basically how I make mine, but I really liked the addition of dry mustard. It gave the flavor a bit more "oomph". I, too, usually use fresh parsley, but didn't have any on hand so I used dry. I think I like it even better since they don't taste so "green". I squeezed a slice of lemon over top when they were done. Super! Thanks for the great recipe. Oh, no need to reserve the liquid. They'll never be cohesive if you do.

Black Bean Salsa

I've made this recipe numerous times. It does make a ton, so you may want to cut it in half if you aren't having a party! The only changes I make is that I chop up the cilantro and add it to the mix and I use the cans of black beans with cumin in them. I eat it with chips, but I think I'm gonna top a taco salad with it for dinner this week. Thanks for the great recipe!

Delicious Egg Salad for Sandwiches

I've never eaten egg salad sandwiches before, so I don't have anything to compare this to, but I thought it was very good. It's super easy and diet friendly if made with low-fat mayo. I only made 1 serving for myself, which made 2 sandwiches. Glad to have a new lunchtime recipe to add to the rotation.
