Campfire Foil Onion

This is an awesome recipe! I've made it while camping and at home in the oven. The recipe is great as-is, but even better if you add a beef boullion cube in the center along with a few drops of worcestershire. It tastes like french onion soup! Great served with steak.

Mini Cheesecakes I

Took these to a party yesterday and everyone loved them! They were really easy to make and taste great. I used the new Mini Nilla Wafers and they fit perfectly inside the mini cups! I baked them in a water bath and used the syrup part of the cherry pie filling to put on top..not the cherry itself because I don't like them personally. Be sure to read the Cheesecake Tips before making. Since these are tiny you do not want to leave them in the oven to cool. Very good recipe...thanks!

Black Bean Salsa

I've made this recipe numerous times. It does make a ton, so you may want to cut it in half if you aren't having a party! The only changes I make is that I chop up the cilantro and add it to the mix and I use the cans of black beans with cumin in them. I eat it with chips, but I think I'm gonna top a taco salad with it for dinner this week. Thanks for the great recipe!

Stuffed Green Peppers

I like regualr stuffed green peppers, but these blow the meat-filled ones away! I did some modifying though...I used black beans with chili and cumin spices in it, Hunts tomato sauce with basil, oregano, & garlic, and instant brown rice to save time. I also used only 1 slice of cheese (halved for layering) per pepper to cut calories. It turned out wonderful. A dallop of sour cream on top before serving enhanced the flavor even more. Thanks for the great recipe!

Cornbread Casserole

Pineapple Cheese Ball

I have made this cheeseball twice. It always gets great reviews by those who eat it. I recommend NOT draining the heck out of the pineapple though. It loses a lot of flavor that way. It is a little wet/runny right after you make it, but after sitting in the fridge for a few hours or overnight it's just fine. Thanks for the recipe!

Brown Rice, Broccoli, Cheese and Walnut Surprise

Decent recipe.....As suggested by others, I cooked the broccoli on the stove, and I used chicken broth instead of vegetable. I think what I didn't care for about this recipe was the toasted walnuts. I guess it's just a matter of taste. I also chopped up a grilled chicken breast and added to mixture in the end. Next time I make it I will omit the walnuts ( maybe sub slivered almonds?) and add more garlic. Overall, it wasn't bad but didn't blow my socks off either!

Tres Leches (Milk Cake)

I've been wanting to make this recipe for quite some time after having this cake at a local Mexican restaurant. This recipe was very easy to make. I did take the advice of others and reduced the amount of sugar in the whipped cream topping to about 1/2 cup. I poked plenty of holes in the cake and the milk absorbed rather quickly, although next time I make it I will use all but about 1/4 cup of the milk mixture as there was some at the bottom of the pan that never soaked in. Otherwise, the recipe is perfect.

Homemade Black Bean Veggie Burgers

This is a really good and fairly easy recipe to make. I have made them twice already. Luckily my husband is a meat-and-potatoes kind of guy, so I get them all to myself! I have eaten them plain, without bread both times and enjoyed them.

Quick Black Beans and Rice

This is a very easy and delicious recipe. I used the Mexican-style black beans and also added 1 t. cumin, as suggested by a previous review. It had great flavor and spiciness. I will definately make this again.
