Brooklyn Girl's Penne Arrabiata

Super yummy. Yes, it is spicy but not bad. I didn't have Red Pepper Flakes so I subbed Ground Red Pepper. I served the kids the chicken, and pasta mixed with a little butter (no sauce). Great, affordable recipe. Fresh basil is a must!

Cajun Chicken and Sausage Gumbo

My husband made this tonight (perhaps that's where the problem started, haha!) and it didn't turn out very good at all. It tasted like bland gravy with mushy sausage in it. It didn't have very much flavor. Perhaps he needed to go heavy on the seasoning. Won't make again.

Angel Chicken Pasta

Loved it! I doubled the sauce ingredients, except for the seasoning, and added a small can of mushrooms on top. Used chicken broth instead of wine. You should most definately double the sauce!! I also cut each breast into 4 big chunks to ensure it cooks through, and is easier to serve. It's amazing leftover too..the sauce thickens. I agree with another reviewer that said she wants to drink the sauce! I freakin' love this recipe!

Pot Roast Dips

Yummy! I used beef broth instead of water, but left everything else the same. Toasted the buns w/ cheese on them in the oven, then added meat. I do wonder why this recipe states that it would make 12 servings though. I used a 1.4# roast for just my husband and I, and it made just one large sandwich for each of us.

Creamy Cranberry Salad

Really good and easy. I totally forgot to add the cream cheese to the whipped cream, but it still was wonderful! I may just make it that way next time too. I tried shredding my Red Delicious apple, but it wasn't working too well, so I diced it up real small. I used Raspberry jello. I think Cherry would be great too.

Stir-Fried Vegetables

Really nice flavor. Used flour in place of cornstarch, and broth instead of water. Was WAY better than using a bottle of stir-fry sauce like I usually do.

Spaghetti Sauce II

Don't know what all the raves are about. I didn't find this any better than my usual $1 can of Hunts in which I add hamburger, onion, and other spices to. Won't make this again. It's not awful, but isn't stellar either.

Famous Pork Chops

We really liked this recipe, but am giving it four stars since it needed slightly altered. I increased baking time to 55 minutes, turning chops over after 30 minutes and removing foil. I placed them under the broiler when done so they would brown up a tad more. Next time I make these I will add some garlic powder to the mix. More garlic salt would be too salty. Don't decrease the butter as others have done, especially if you plan to remove the foil at the end. My kids loved these too :-)

Authentic Cincinnati Chili

I'm from Cinci and Skyline is my fave. No recipe will ever match the real deal, but this is very close. I used 1 t. ground allspice since I don't have the berries, 2T cocoa powder instead of real chocolate, and cider vinegar instead of regular. I didn't find it necessary to refrigerate to get the fat off. Using 93% lean hamburger, there wasn't any fat to speak of, and what little there may have been would've only enhanced the flavor. I did have to keep adding more water as it cooked. This recipe was just a tad more meaty than Skyline's. Theirs has a bit more water/grease for saturating the oyster crackers! It is absolutely necessary to finely shred mild cheddar cheese right before serving. The pre-packaged shredded cheddar isn't soft enough. Also, must serve with oyster crackers. One last note: make sure your dog doesn't eat any plate leftovers that go in the garbage. Gives them serious diarrhea. Guess it's not much different than getting some Skyline after drinking all night, LOL.

Grammy's Overnight Lasagna

Wonderful! Only things I did different was used 16 oz. of cheese, added an egg to the cottage cheese, and added some dried basil and a little minced garlic while cooking the meat. I'm sure the sauce plays a huge roll in the flavor. I used Hunts Meat Sauce. It was perfect AND is only $1 a can! I used a 8x11 pan so everything was snug and stayed together. Just a note: in the past I've used low-fat cottage cheese and it turns watery. This time I used the full-fat small curd and the flavor and texture were perfect. I also used no-boil lasagna, but I always soak them in hot water for about 40 minutes before using them. Just a little tip I've heard along the way and it really does ensure they cook through. NOTE: The Oven-Ready lasagna noodles at Walmart are under $1.50!

Simple Chicken Burritos

These seriously are so quick and easy to make. Plus my husband and 1 & 2 year old like these. Excellent as-is, or is also a great recipe to build on. I use McCormicks Chicken taco seasoning. It's a MUST. Not nearly as good with regular taco seasoning meant for ground beef. And the Pico de Gallo is simple and delicious. I actually make it often and also use it to dip tortilla chips in.

Delicious Egg Salad for Sandwiches

I've never eaten egg salad sandwiches before, so I don't have anything to compare this to, but I thought it was very good. It's super easy and diet friendly if made with low-fat mayo. I only made 1 serving for myself, which made 2 sandwiches. Glad to have a new lunchtime recipe to add to the rotation.

Easy Homestyle Green Beans

So easy & very good! Tastes like Grandma's beans she'd cook all day long. YUM! I had to more than quadruple the recipe for the party I was serving them at. I would suggest reserving the liquid from the cans of beans and then adding in what you feel necessary. Mine were a bit soupy.

I tweaked this recipe a bit per the "Most Helpful" review from Rouver. So glad I didn't add all the oil the recipe calls for! I thought it tasted pretty good. I will probably make it again since I always have these ingredients on hand.

Black Bean and Salsa Soup

5 Stars for Easy & Tasty! I used 3 cans of BB, added some garlic, 2x the cumin, and 1/2 C. frozen corn. Was really good. If you're going to add in a bunch of other ingredients (like chicken, tomatoes, corn, and other stuff) and have more time, you should try the "Slow-Cooker Chicken Tortilla Soup" from this site. I think I like it just a hair better, but you really can't beat this for how quick and easy it is. I made it and ate it in peace, all while my kids napped :-) Great recipe. Don't eat if you have big plans the following day though, like traveling, errands, client meetings, etc....if you catch my drift!
