Whole Grain Pancakes

These are great. The mix of grains is very good. I tweeked a little bit - added 1/2 tsp of salt, 1/2 tsp of vanilla and 1/2 tsp of cinnamon, but only because I really like cinnamon. Plus, I let the batter sit for about 5 minutes so the oats could absorb some liquid.

Bean Potato Enchiladas

This was very good! I sauteed the onion and a little green pepper before adding it to the potato mixture. We had some left over and used it for a quesadilla the next day and it was good there too.

Roasted Sweet Potatoes & Onions

This is a good combo! I forgot to cover it, and it was still fine. The onions get nice and caramelized and the amaretto has a nice sweet flavor that compliments the sweet potatoes.

Pot Roast in Beer

This was great. I used extra garlic and omitted the cloves, though if (when) I do this again, I'll use them. We used a bottom round, and it was really tender and made super sandwiches through the week.

White Peach Sangria

This was delicious. I used peach vodka and a little peach schnapps. I also added a few raspberries for color. Next time I will save a little for myself before I take it to a party - it was gone in no time!

Fig and Olive Tapenade

This was great. I used less balsamic vinegar than the recipes wanted, because it's a strong flavor and I didn't want to lose the fig flavor. The vinegar was still kind of strong, so I might add even less next time. It was great anyway, though. I took it to a girls' night get-together and the hostess asked me for the recipe.

Fantastic Black Bean Chili

This recipe is a good starting point. I used a full 28 oz can of tomatoes as well as a jalapeno with the onion (I like a little heat). I also didn't add the sweet spices. Next time I'm going to use a mix of black beans and chick peas.

Spiced Butternut Squash Soup

Excellent recipe! I make this soup at least once every year. I use skim milk rather than half and half and it is still great. Don't skip the sherry, it adds a great flavor. Just fyi, I alter the recipe each time depending on what I have on hand, and I don't think you can mess it up. One time I used vegetable broth instead of chicken for a vegetarian friend, and it was not as good, but still fine.
