Basil Tomato Soup

I am not a fan of completely smooth/pureed soups so in addition to the crushed tomatoes, I sauteed some diced white onions along with adding a 14 oz. can of diced tomatoes with basil instead of the fresh basil. I thought it was super easy to make and very tasty. This will be in the rotation of winter soups.

Layered Chicken and Black Bean Enchilada Casserole

I didn't have any black beans on hand so I made it with dark red kidney beans. I was completely surprised at how much I liked it, plus it is a lot easier than a from-scratch recipe I have for chicken enchiladas. I would highly recommend you make it.

Roasted Garlic Bread

This was great, but then again I love roasted garlic. Be warned that the garlic can need upwards of an hour to roast. I made the spread the night before. I loved the roasted flavor instead of the harsh garlic flavors usually associated with garlic bread.

Irish Cream Chocolate Cheesecake

I served this at a dinner party to rave reviews. One guest said it was the best cheesecake he's ever had! Add some extra Bailey's. Note however that the chocolate and Bailey's flavors are very mild. Doesn't have the tang of a NY-style cheesecake, but incredibly smooth flavor and texture.

Chocolate Rum Balls I

Note: the amount of crushed cookies is equivalent to a full box. You can crush them using a food processor. You can also substitute bourbon for the rum. I was initially skeptical of how they would come together, but overall they went together beautifully.

Cornbread Sausage Casserole

Usually the first time I make a recipe I follow the recipe exactly. However I didn't with this one. Instead of layering ingredients, I just mixed them altogether (which is how I like casseroles). I also used 2 boxes of Jiffy corn muffin mix, which made it too sweet. Next time I will use a roll of spicy sausage and a not-quite-so-sweet cornbread mix. However it was still pretty yummy. Heated up well the next day in the microwave too.

Pork Tenderloin in Bourbon

I have made a slightly simplified version of this with just bourbon and soy sauce. It is so simple, but dinner guests love it! Don't be afraid to serve it to company. It doesn't taste anything like its individual ingredients.
