Beef Peach Pie

Reviewed: Aug. 14, 2006
We made this several times and it was as a big hit each time. The first time I used fresh Red Haven peaches, and when they are in season, that is the way to go. The peaches were a bit hard and that was great. In the winter we use canned peaches and that is almost as good. 5 stars either way.

Broiled Scallops

Excellent, I agree with her husband. Used crushed garlic and sprinkled some kosher salt. Used frozen scallops thawed overnight in the fridge. It took about 9 minutes on the 2nd rack under the broiler. Thanks for a new favorite!

Broccoflower®, Cranberry and Almond Salad

Reviewed: Oct. 16, 2006
Very good. Served it with the slow cook short ribs. I didn't have slivered almonds so I chopped some toasted whole almonds in the food processor and it worked fine. Will make again. Terrific for a pot luck.

Slow Cooker Quinoa Sweet Potato Chicken

Reviewed: Feb. 1, 2014
I don’t know why we made this because I did not expect to like it. I waned something with Quinoa, I guess. It was a surprise for both of us, WE LOVED IT! I used canned chicken from Costco and just dumped everything in the slow cooker for 8 hours. I did put it on high for about the first 1/2 hour. It is just the two of us but we always make a full receipe and freeze the rest in 2-meal sized containers. We are having it for dinner avain tonight. Thanks for a delicious dinner.

Beef and Mushroom Stroganoff, Aussie Style

Reviewed: Dec. 2, 2011
Everything tasted good, but the meat was tough. I must have cut the strips too thick. We used Half & Half and light sour cream. Next time I might do the recipe as written and my wife thinks we should use a more tender cut of meat.

Baked Chicken Amandine

Reviewed: Nov. 30, 2011
Great taste. Pretty rich, but we finished it. Did not change anything except we made half a recipe, forgot to precook the chicken and so left it in the oven a bit longer.

Tomato Barley Soup

Reviewed: Jan. 23, 2008
Excellent!!! Except for stock, we never make soup. We followed the receipe exactly but we added some cooked polish sausage. We sliced it into about 2 inch pieces and put it in as we turned the soup down to a simmer. My wife and I ate it with sourdough bread and loved it. The receipe was enough for anbother meal. It is in the freezer for another day. Thanks, loved it.

Authentic Huevos Rancheros

I have eaten Huevos Rancheros in several parts of Mexico, Arizona, Texas and even in the Midwest. I don't know what "Authentic" means because cooks do things differently. I am going to try this because it sounds good.

We liked it, but I must have done something wrong because it was overcooked. I had 5 frozen chops and a 28 oz bottle of BBQ Sauce. Five hours on low. The fivew chops were 1.79 lbs.

This has become a favorite. I haven't tried the yeast yet. It is fine with the parm. Will get some yeast soon. I use my micro popper and a buttry spray for the butter flavor.
