Miso-Glazed Skirt Steak

Reviewed: Jun. 23, 2014
Had it last night. We found Minute Miso in Roger's Supermarket in St. Joe. We went to Falatic's meat market and they didn't have skirt steak, suggested flank steak. We followed the recipe and we all thought it was great. It is tender when it is cooked at least to medium. Rarer, as Chef John said, is tough. Surley wondered why her's/his was tough and it was because they cooked it rare. I'm going to make it for company.

Peanut Quinoa

We liked it very much. Next time I will get sesame oil. I used 1 T of Olive and 1 T of roasted sesame seeds. I wanted to keep the czarbs down so instead of Noodles I used Quinoa and mixed it with the sauce. Used Splenda instead of sugar.

RITZ "Everything" Bites with Lox and Schmear

Reviewed: Feb. 3, 2014
Tasted great but it was soggy before the game started. Made for Super Bowl party. Made at home, packed in tupperware, layers separated by wax paper. Will make again. Next time put on crackers just before serving or use ice box rye. Everybody loved them in the begining when the crackers were crunchy.

Slow Cooker Quinoa Sweet Potato Chicken

Reviewed: Feb. 1, 2014
I don’t know why we made this because I did not expect to like it. I waned something with Quinoa, I guess. It was a surprise for both of us, WE LOVED IT! I used canned chicken from Costco and just dumped everything in the slow cooker for 8 hours. I did put it on high for about the first 1/2 hour. It is just the two of us but we always make a full receipe and freeze the rest in 2-meal sized containers. We are having it for dinner avain tonight. Thanks for a delicious dinner.

Beef Barley Vegetable Soup

Reviewed: Jan. 27, 2014
This was great! We used a 3 lb chuck roast, trimmed some fat and cut into cubes. Not real small. Doubled the barley because I love barley. We did put everything in the slow cooker (10 hours) except the barley right from the start. Added the barley with about 45 minutes to go and stired the stew at that time. I used broth and didnt have enough so i put in some chicken broth. We had spagetti squash parmisian as the vegetable . That slow cooker is great. I never would have done this on the stove!

Szechwan Shrimp

Reviewed: Jan. 26, 2014
I bought some huge shrimp, maybe they were prawns They were cooked, but I had to shell them. It wasn't as hard as I expected. WOW! Was it worth it. I used a tad less of the pepper flakes because my wife was afraid it would be too spicy. I think either way it would be fine. What delicious flavor. My wife and I both felt the shrimp were just fantastic. Just salad on the side and we had a nice meal.

Healthy Mexican Chicken Bake

Reviewed: Jan. 22, 2014
We made a this and put it in the freezer for a ready meal.. We used Sweetfire Salsa from Benton Harbor MI. Followed it exactly. Last night we got home from a trip and decided to thaw enough for the two of us (one breast) and had it with a salad. Poured some extra sauce on the chicken and immediately clicked it into our favorites. Can’t wat to have company and make it for them. Nice to have such a great make-ahead meal that freezes so well. Thanks Joy!

Slow Cooker Turkey Breast

Reviewed: Dec. 20, 2013
We thought it was very good. Unfortunatly, the store did not have a large breast so they convinced me to use 2 , 3 lb breasts. I did thd hour on high and 7 on low gthen let it sit on warm about an hour or so till we were ready to eat. It was a little dry, but the juices from the bottom of the pan fixed that. Maybe having 2 smaller pieces dried it out a little. Next time I’ll get the bigger piece.

We made this for the second time It's really terrific It's not that hard to make and the only change we made was that I didn't have the parsley so we skipped but we didn't miss it one bit This is an outstanding recipe and I'll be making it over and over again Thanks so much

Ray's Chicken

Reviewed: Aug. 16, 2013
Wonderful flavor. I overcooked the chicken a bit so it was not as juicy as it should have been. My wife made great chicken salad the next day with grapes and walnuts and mayo which was 5 plus. We will d it again and be more careful. I often have a problem with chicken breasts on the grill because we are so afraid of undercooking chicken.

Mini Frittatas

Reviewed: Apr. 13, 2013
My wife and I liked these very much. Unfortunatly, I did not have cumin and forgot the black pepper, but they were still very good. Did not use salsa cause I did not see where it went but we did not miss it. I'll do it again with the cumin and black pepper then decide which way to prepare it for guests.

Broiled Scallops

Excellent, I agree with her husband. Used crushed garlic and sprinkled some kosher salt. Used frozen scallops thawed overnight in the fridge. It took about 9 minutes on the 2nd rack under the broiler. Thanks for a new favorite!

Peanut Butter Stuffed Jalapenos

Reviewed: Nov. 18, 2012
I liked it, but the chile lost most of it's heat in the cooking and maybe I put on too much peanut butter. I may have cookedit too long. Will try again, broiling without wrapping and see what happens.

And finished it up with some sherry poured in. Really good anyway you have it. It is a lot like my grandmothers except she put lima beans in and we werer gratefull that there were no lima beans.

Chicken Marsala

Reviewed: Oct. 6, 2012
This was wonderfull. We used a lot more mushrooms, marsala and dry sherry, (we never use cooking wine) then thickened the sauce a bit. I used more chicken too, but there were no leftovers :-( Thanks for a terrific and easy meal. Foolproof.

Beef and Mushroom Stroganoff, Aussie Style

Reviewed: Dec. 2, 2011
Everything tasted good, but the meat was tough. I must have cut the strips too thick. We used Half & Half and light sour cream. Next time I might do the recipe as written and my wife thinks we should use a more tender cut of meat.

Baked Chicken Amandine

Great taste. Pretty rich, but we finished it. Did not change anything except we made half a recipe, forgot to precook the chicken and so left it in the oven a bit longer.
