Lower Fat Banana Bread I

I have been using this recipe for years and years and everyone loves it. Just some changes: I substitute applesauce for margarine and I freeze my old bananas. By the time I defrost them, there is already enough banana-flavored water for the 1/4 cup water. I know it sounds gross but it's a complete hit everytime! UPDATE (6/2011): I made this yesterday with yogurt subbing for the margarine and water AND 1/3 c flaxseed for 1/3 c flour. I baked them in muffin pans at 325 for 30-35 min. Still PERFECT!

Magic Mango Bread

This tasted delicious! I substituted the butter for applesauce and addded vinegar (no lemon juice on hand!) for the baking powder to work. Thus, I didn't have a problem with it rising. My mangoes were actually tart so the sugar called for was fine; otherwise you may want to halve it. The other reviewers were right - this did not taste that great the first day. But by the next day, it was amazing! Thanks for such a great recipe!

Wow, this was a surprisingly great sauce! It does not taste that authentic, but who cares? It tastes delicious. I really should have tripled the sauce! Not ketchup-y at all!

Baked Sweet Potatoes

i thought this was pretty good, but i agreed with some other reviews that oregano probably did not go best with sweet potatoes. at another suggestion of another reviewer i diced my own onion, substituted the second time with seasoned salt and threw it all in with the diced potatoes, and it was excellent.

Barbie's Tuna Salad

This was very easy but taste was actually just ok. I agree on doubling the sauce but it was a bit thin. If I try it again maybe I will add cornstarch.

Grilled Asian Chicken

Very easy. Took some other recommendations - cut the sesame oil in half, added some water (since I did not have low sodium soy sauce). Marinated overnight and it was yummy the next day after the grill!

Banana Bread VIII

I made this once about 2 years ago and I did not care for it. I ran out of eggs again last night and really needed to make banana bread. Grudgingly, I went ahead and tried this recipe again. Like last time, I substituted 1/2 c applesauce for shortening/butter and halved the sugar. Reading more recent reviews, I added 1 tsp of baking powder. I baked it in my conventional oven. From the last experience, I was not expecting much, just something edible to munch on. What a surprise that it came out good this time. Maybe the addition of the baking powder and baking in conventional oven?? I still prefer the Low-Fat Banana Bread I but wouldn't mind if I ran out of eggs more often!!

Peanut Butter Noodles

Asian Fire Meat

Nothing special or too different from what I grew up eating. I wouldn't call this "Fire" - I added the more than the amount of red pepper and some Sriracha Hot Sauce and can still barely taste the heat. I agree with other reviewers that the sauce was too salty for me and that it needed more brown sugar. One advice for others - do NOT leave out the sesame oil or substitute it. The sesame oil is very important in Asian cooking and gives this recipe its flair.

Pineapple Upside-Down Cake VII

This was a very easy way to make this cake. I tried VicRose97's method and melted the butter and sugar (which I cut both in half) together and spread this paste onto a pan that was arranged with pineapple chunks and cherries. Only reason for 4 stars instead of 5 because it is not dense like the ones my mom made from scratch... but I guess it's because this is a short cut recipe!

These were yummy. I agreed with some reviewers that the garlic was a bit strong so I may have to cut down on it. I used goldfish crackers, but was a bit unsure what crackers added to the taste as well.

Ignacio's Super Peanut Butter and Jelly Sandwich

I eat grilled or toasted PB&J all the time so when I made this, my boyfriend and I did not think it was such a big deal. Instead, we thought it was too bready. Maybe this is a better recipe for kids. Will stick to my regular 2-sliced PB&J. Thanks for posting!

Dave's Ultimate Guacamole

This is usually the way I make guac and it is so simple! The only thing is I do not do is using a food processor. I like guac chunkier (gives it the homemade-feel) so I usually lightly mash the avocado. Also, this recipe depends on the salsa - use a good quality salsa not a generic one. It really makes a difference!

Easy Indian-Style Chicken

I was surprised how good this turned out! This is my first time attempting an Indian dish, and both my boyfriend and I really liked it. I could not find cumin seed so I used ground cumin. I agree that this does not give a very bold Indian flavor, despite doubling the spices. But I still highly recommend this to anyone who is new at cooking Indian dishes.

I grew up making this with my mom so it's such a nostalgic treat!! I substitute soymilk now since I've become lactose intolerant. Don't pass this up - it's so so delicious!!
