Slow Cooker Adobo Chicken

Reviewed: Jan. 18, 2011
I used 1.5 lbs of drumsticks so I halved all the the ingredients except the garlic (kept it at 8 cloves). From the other reviewers, I trusted them (who would know better than a Fillipino!) and left out the onions, added 2 bay leaves, dash of brown sugar, 8-10 peppercorns, and some water. Cooked it at 6 hours on low, could have probably been taken out before since it was a bit on the dry side. The smell as it cooks makes you salivate and the sauce comes out amazing! So easy that I will definitely make again and take it out a bit earlier.

Aunt Blanche's Blueberry Muffins

Reviewed: Jan. 18, 2011
Pretty yummy coming out of the oven. However, I agree with another reviewer that it was not great the next day - lost its crunchiness and was a bit soggy. Not sure how to fix this so I probably will not make this again.

Blueberry Cornmeal Muffins

Reviewed: Jan. 11, 2011
This is the first time I made muffins and I am slightly disappointed. Maybe because I used frozen blueberries and did not drain the excess fluid, but I needed to bake mine for at least 35 minutes before they were done since they were still mushy. They are not that sweet, but that it actually fine with me. They did rise and look beautiful. Next time, I will drain the frozen blueberries, and probably put more sugar in the batter for my husband.

Cornbread Muffins I

Reviewed: Jan. 5, 2011
This was pretty good. It's interesting that this was really sweet (even after cutting the sugar some) and had corn. I substituted applesauce for butter. I made this into mini-muffins and turned out to be a great snack!

Cinnamon-Roasted Almonds

This was okay. It did not taste like the ones I get off the streets of NYC. Smelled great while they were in the oven!

Bisquick® Pancakes

Reviewed: Dec. 12, 2010
UPDATE: Apparently there are a lot of versions of "Melt-in-your-Mouth." I found one that (in addition to this recipe) incorporates 2 tbsp lemon juice, 1 tsp vanilla, and 2 tsp baking powder. Maybe the added acidity did something, but this version with the lemon juice was much better and the pancakes were not as thick. If I use Bisquick, this will be the version I use from now on! ORIGINAL REVIEW: I have made the pancakes this way and with the Melt-in-your-Mouth version (by ANISSA925). The one above is somewhat plain, but with some things thrown in (ie berries) much improved. The Melt-in-your-Mouth version is a bit too thick for me.

Whipped Cream Cream Cheese Frosting

Reviewed: Dec. 6, 2010
This recipe is similar to the "Sturdy Whipped Cream Frosting" on this site but I think I prefer this one better. The smaller amount of whipping cream makes the difference and I like these directions better. I probably should have read some of the reviews before I started and whipped this longer to make it more stiff. But I'll know for next time. I've topped this on "Crazy Cake" from this site and works amazing!

Crazy Cake

Reviewed: Dec. 3, 2010
First time I made this, I followed directions exactly. Turned out terrible since I could not mix it well in the actual pan. When the cake was done, it stuck to the bottom - impossible to get out! And the unmixed flour/soda was a bitter, unwanted surprise in each bite! The second time, I put everything in a bowl so EVERYTHING could be properly mixed. I GREASED the baking pan. What a difference these 2 simple steps made! Now, I can absolutely agree with the raving reviews - decadent!! Oh, I also added some chocolate chips. 3 stars due to the modifications from the original recipe. With the modifications, 5 stars!!

Sturdy Whipped Cream Frosting

Reviewed: Dec. 1, 2010
This was a yummy frosting, but I agree with other reviewers that this probably would be better for a fruit cake or pie or simply a dip for fruit. I froze my whips and bowl for about 30 minutes prior. I also placed the whipping cream in the freezer for about 5-10 minutes to get it real cold. I mixed the whipping cream until it almost formed peaks. Then I whipped the other stuff and added it to the whipped cream and whipped it some more. I will make this again! EDIT - It's just my husband and I in the house so I had to put the frosting in the fridge so it does not go bad. It does go runny after the second day, lost its firmness. Still great flavor though!

Whipped Cream Cake I

Reviewed: Nov. 21, 2010
My mom used to make a cake with whipping cream. Her recipe is impossible to decipher ("half carton this and a pinch of that..."). This recipe came closest. First time for me making cake from scratch and this turned out just as good as my mother's!! I did not have cake flour so I substituted 1 1/2 all-purpose minus 2 tbs and added 2 tbs of corn starch (something I found on the internet). And I cut the sugar down to 3/4 cups. My mother usually baked hers at 375 for about 25minutes. It turned out wonderful and even better the next day!! I will be making this again and again!

Chicken Lo Mein

Reviewed: Oct. 29, 2010
I used chow mein noodles and substituted bean sprouts and some sliced tofu for the mushrooms. I did add the oyster sauce and added 2 full cups of chicken broth and no water. The flavor and texture of the sauce was very good, but wow - it was WAY too salty!! I could not even eat the chicken that was marinated in the soy sauce! I will make this again, but I think I will have to half the soy sauce and only use one cup of chicken broth in attempt to cut down the salt.

Spanish Rice II

Reviewed: Sep. 16, 2010
I took other reviewer's advice and added 3 gloves of minced garlic and at least 2 tsp of cumin. I am Asian so did not want to use the white rice I had on hand so I used all brown rice. Didn't have chicken stock or green pepper on hand. Used Roti Hot tomatoes. The first night I cooked this, it was very mushy and yes, a still bit bland. However, as leftovers the next day, it was MUCH better!! 3 stars due to all the changes needed, but I will make it again with the substitution of chicken stock.

Teriyaki Chicken

Reviewed: Aug. 9, 2010
I am shocked that this recipe had such a high rating. Either people's salt tolerance is way too high or there were a lot changes made to the recipe. This was extremely salty, even with low sodium soy sauce. And all I could taste was the salt and soy sauce, so I probably would never name this "teriyaki" since I could not taste that. There needs to be some other seasoning. Marinating the chicken probably would help. I ended up with so much thin sauce that I actually ended up using it as a base for my stir fry vegetables (diluted so it wouldn't be so salty). Definitely will not be making this again.

Teriyaki and Pineapple Chicken

Reviewed: Jun. 2, 2010
This was pretty good. Fiance doesn't like peppers so I left them out completely. Only had a 16 ounce pineapple can on me so used that with all the juice. Came out a tiny bit thin, probably because of the extra liquid. Marinated the chicken for about 30 minutes. I also threw the onions, chicken, and mushroom into the pan at once, and when the chicken was still slightly undercooked, I then threw in the sauce and pineapple and let it simmer. Overall, will make again!

Honey Baked Chicken II

Reviewed: Mar. 31, 2010
I had chicken breasts on hand so I used those. Probably would be better with bone-in chicken since it came out a bit dry. Sauce was very good but I was a bit surprised how sweet it came out so next time I may decrease the amount of honey. I did add minced garlic and cut down on the butter. I do wish the sauce was thicker. I would make this again with some minor changes!

Salsa Chicken

Reviewed: Mar. 25, 2010
I've made this a couple times and can't believe I keep forgetting to rate this! This makes such moist and juicy chicken! To make it hotter, replace some of the salsa with the Rotel can of hot tomatoes!!

Quick and Easy Mexican Chicken

Reviewed: Mar. 25, 2010
I had to increase the amount of cumin, garlic, and cumin for the rub. I did substitute a can of hot Rotel for the salsa. This turned out good. Served it with fresh avocado, lettuce, and black beans wrapped in a tortilla for a yummy burrito! Next time, I will try the review where the instant spanish rice is cooked with the chicken in the oven! Sounds like a true time saver!

Coriander and Cumin Rubbed Pork Chops

This was good except we cut down on the garlic and the salt. Just be very careful not to overcook it, it can be very easily dried out.

Molly's Chicken

Reviewed: Feb. 23, 2010
I am not sure what is off about the sauce - probably the combination of the tomato sauce with soy sauce? Plus, it was too sweet and too salty - a strange combination that just didn't equalize each other out. I made the state amount of sauce and we had to throw half of it out! The 2 stars was for introducing me to cooking drumsticks this way. Wow - so tender! This will ALWAYS be the way I cook drumsticks now, just with another sauce in another recipe!

Chocolate Pudding Pie

I thought this was simple recipe that satisfied my chocolate craving. I realized while I was at the store that there is a recipe for pudding pie on the box and I actually followed that recipe. And gummy worms??? Chocolate chips sounded much better!
