Marshmallow Treats

Very close to the original, just a cup off the rice cereal. I preferred this a bit more since it's more gooey. Today, I added 1 tsp vanilla and 2 tbsp cocoa powder to the marshmallow treats as they melted. Then I added half Rice Krispies and half Cocoa Krispies and some chocolate chips. To die for!! Use wax paper - never sticks for me. Put the pan in HOT water after and clean-up is a breeze!!

Fudgy Buttons

I was craving fudge and wanted to try this recipe since I had everything in the house. I followed the directions to a T and the batter was super runny!! There was no way it would have set at room temperature so I had to throw it in the fridge. The taste is okay. I may make it again later but the runny batter really turns me off!

Baked Whole Cauliflower

I really like cauliflower and my husband hates it. So I thought, given the high reviews here, I give this recipe a shot. I took some advice and simmered the cut-up cauliflower in chicken broth. It was really yummy, and probably should've just stopped right there. But I went ahead with the breading and baking. It tasted like cauliflower with breadcrumbs. I was not wow-ed by this and my husband definitely did not like this either. Won't be making this again.

Strawberry Jam

I had some frozen strawberries in syrup that I needed to use up. So I scaled back the recipe for 1 pound and the sugar more since the strawberries were with syrup. SO GOOD!! And the stores charge $4 a jar for these?? Hoping to make my own from now on!!

Graham Cookies

I had a sleeve of graham crackers that were embarrassingly old. So I found this recipe and figured I could salvage the crackers. Since I only had one sleeve (9 crackers), I halved the recipe, reduced the sugar by more than half, and followed the rest of the instructions. I did take a reviewer's idea, making it the "fudge" way. Oh wow, it was so good!! I wish I was not forced to half this!! Next time, I make it, I will keep the original portions but half the sugar.

Tofu Parmigiana

I pressed the tofu for about an hour (set a pot on top) and then froze it. I then dipped it in the egg and then the breadcrumbs, and put it in the oven for 20-30min at 350. Still had some problems with the breading staying on. I used Ragu jar for the sauce. Turned out excellent. I would make this dish more often but it is a bit time consuming.

Famous Pork Chops

I had 3 pork chops and used one egg. I used 1/4 cup of butter and it still came out too soggy, even after broiling it. The meat itself was tender but the breading was wet and stuck to the pan. If I try this again, I will use even less butter and maybe leave it uncovered the whole time?

Kathy's Delicious Whole Slow Cooker Chicken

I used chicken pieces. I am also very lazy - I did not skin the pieces, thus left out the olive oil completely. (Keep the sesame oil!) I threw in 4 crushed garlic cloves, rest of the ingredients, and layered sliced onions below the pieces. Low setting on 8 hours for chicken pieces will dry it out, especially if using white meat. Using low heat, I threw in some carrots at 3 hours, and at 4 hours, I threw in some broccoli. After another 30 minutes (4.5 hours total), it was ready! Even better the next day!

Moist Banana Muffins

Mixing the dry with the wet was REALLY difficult! So I added in maybe 1/2 tbsp of heavy cream. The result was wonderful. I had to take stars off for the dryness but with a bit of liquid, it was SO yummy!! Oh, I did substitute brown sugar for the white too.

Amazing Simple Thai Tofu

I followed the directions and even blended the peanut butter with some hot water before mixing it in the wok. It essentially tasted like tofu with warm peanut butter since the peanut butter did not incorporate into a sauce. I think the directions should be to cook the tofu first (or prepare it by dry-frying and marinating), set tofu aside, make the sauce in the wok (will probably need more liquid of some kind to give it more flavor - coconut milk?), and then put the tofu in.

Pat's Blueberry Muffins

This is my third time making blueberry muffins. It tasted a bit bland, even after increasing the sugar. Will keep looking. Edit - The next day, it tasted very dense and heavy. Had to change my 3 star rating to 2 star. Sorry, need to find a blueberry muffin that I can eat throughout the week.

Korean Spicy Marinated Pork (Dae Ji Bool Gogi)

I don't think I've ever had this before in a Korean restaurant so I am not sure how it is suppose to taste. I had some loins I needed to use up so I put this together without the gochujang. I substituted Siracha instead. Otherwise followed this recipe to a T (marinated pork 8 hours) and it was amazing!! Love the heat in this sauce. It is not for the timid!!

Slow Cooker Adobo Chicken

I used 1.5 lbs of drumsticks so I halved all the the ingredients except the garlic (kept it at 8 cloves). From the other reviewers, I trusted them (who would know better than a Fillipino!) and left out the onions, added 2 bay leaves, dash of brown sugar, 8-10 peppercorns, and some water. Cooked it at 6 hours on low, could have probably been taken out before since it was a bit on the dry side. The smell as it cooks makes you salivate and the sauce comes out amazing! So easy that I will definitely make again and take it out a bit earlier.

Pretty yummy coming out of the oven. However, I agree with another reviewer that it was not great the next day - lost its crunchiness and was a bit soggy. Not sure how to fix this so I probably will not make this again.

Blueberry Cornmeal Muffins

This is the first time I made muffins and I am slightly disappointed. Maybe because I used frozen blueberries and did not drain the excess fluid, but I needed to bake mine for at least 35 minutes before they were done since they were still mushy. They are not that sweet, but that it actually fine with me. They did rise and look beautiful. Next time, I will drain the frozen blueberries, and probably put more sugar in the batter for my husband.

Cornbread Muffins I

This was pretty good. It's interesting that this was really sweet (even after cutting the sugar some) and had corn. I substituted applesauce for butter. I made this into mini-muffins and turned out to be a great snack!
