Slow Cooker Texas Pulled Pork

This was very good. I left out the thyme and oil as well as the chicken broth (didn't want it to be too liquid-y). I used whatever bbq sauce we had (which was Stubb's) and it went really well. Cooked for about 9hours low, then shredded the meat and dumped it all back with the sauce and let it sit for another hour or so. Delicious sandwiches! Will definitely make again!

Roasted Garlic Lemon Broccoli

This is the first time I roasted broccoli and not sure about this flavor. The garlic burned and I felt like there was not enough oil. Thus the broccoli came out a bit bitter and dry and burned (I had to pull the broccoli out after 15 minutes). I may just stick with stir frying.

Chocolate Fudge Buttercream Frosting

I was skeptical about the hot fudge but this turned out very good. I used all shortening because i wanted to use my shortening supply up. If I could do one thing different next time is add the milk at the end to control the texture. It was a bit runny but I was still able to frost the Crazy Cake off this website fine. (By the way this frosting on the Crazy Cake is a divine rich chocolate dessert! )

Garlic Shrimp and Cheesy Grits

This is actually a pretty good recipe except for the liquid ratio being off for the grits. Like some others I added an extra cup of milk (I used whole) and the grits came out great. I also added a whole onion and a squeeze of lemon to the shrimp topping.

Alfredo Sauce

I had a block of imported parmesan cheese so I shredded that and added extra clove of garlic. Even with a lot of whisking this still came out grainy. The parm flavor was way too strong but that may be due to the imported block I used. Otherwise it was easy. But I don't think I will be making this recipe again.

Chocolate Frosting I

I had to tweak this recipe as I went. First, I added a bit more than 1/2 cup cocoa powder. Then I realized there was definitely not enough for my 2 layered 9in-round cake so I added another 1/4c of butter (instead of margarine, by the way). And boy was I glad I slowly added the powdered sugar. Even after increasing the butter and cocoa powder, I still only used maybe 1.75c of the sugar and it was plenty sweet. I did have to use a whole 1/3c milk (but that is with me doubling the butter). 2 stars for the base, but with my adjustments, 4 stars. I will continue to look for other recipes that do not need so much tweaking!

Four Egg Yellow Cake

This was my first time making yellow cake from scratch. It was a bit dense, not really light as I wanted it. It also sunk in the middle and tasted a bit egg-y for me. I did cream the shortening and sugar for 5 minutes, beat in the eggs one by one, and kept the milk and eggs at room temperature. Maybe it was because I continued to use the mixer after the dry was added. I do see how other reviewers could relate this to cornbread - while it does not taste like corn bread, the consistency was very similar. Other people liked it, but I think I will be trying another yellow cake recipe in the future.

Black Bean and Corn Quesadillas

This was very good. I didn't change anything, but next time I will just dump the whole 15oz can of corn. And definitely I take the other reviewers' advice - I sprayed the tortillas and put it in the office at 400 for 10minutes and broiled it for couple more. Yummy!

Korean Spicy Chicken Tenders with Sweet Apple

This was pretty good. Next time I will add more apples (maybe use a whole one) and cut the apple pieces larger (I think I diced instead of leaving them in chunks). Definitely find the gochujang sauce!

Slow Cooker Lemon Garlic Chicken II

I did not have time to brown this so I threw everything (except butter) in the crockpot. I added onions and mushrooms. I added extra garlic cloves, oregano, and some white wine. I used enough chicken stock to cover the chicken. Cooked my frozen chicken breasts on low for about 4 hours. I also thickened the sauce at the end on the stove to make a gravy mix with cornstarch. Despite these changes, the chicken was still dry and bland. The sauce was okay. I do not foresee myself making this again.

Addictive Pumpkin Muffins

I halved the recipe, but should not have since it was so loved! The only complaint I have is that it is a bit sweet for me, but everyone else did not mind. Also, I did do half whole wheat flour and left out the nuts. I always use lining but after reading the reviews that they stuck to the liners I sprayed my pans really well and stuck them straight in. Only 1 stuck and broke apart. I kept all the spices the same -they were just right! Easy and delicious, highly recommended!

Blonde Brownies I

I agree that this batter came out like cookie dough. I did not want to make a big cookie so I added some heavy cream that I had on hand and from the reviews, cut down on the brown sugar by 1/4 cup. I baked it in my 7x5 Pyrex glassware. Instead of chocolate chips and walnuts, I threw in some old chopped Butterfingers. I did only bake it at 325 (since it was glass) and baked it for about 30-35 minutes. It rose really nicely and was not thin or cookie-like. Excellent blondie!

Slow Cooker Carolina BBQ

My grocery store only had picnic shoulder so I used that. It cooked in the crockpot for about 10-11 hours on low (and it really did not stink the house up THAT much!) After the shredding it into the sauce, I let it cook on low for another 1-2 hours. It was pretty yummy. But next time, I will try to make more of the sauce for the side.

Aw-some Coleslaw

It does not taste like KFC coleslaw to me at all, but it was pretty decent to put over pulled pork sandwiches. I used a 14ounce coleslaw bag mix, did not use that much milk (probably only 1-2 tsp), added a pinch of celery salt, and placed it in the fridge for 24 hours. It was a bit runny for my taste. But my husband, who usually despises coleslaw, put this coleslaw on every pulled pork sandwich he ate, which is a pretty big feat!

Spicy Hot Chicken Legs

Halved the recipe since it was just for me and my hubby. I did not add as much butter but kept the Frank's Hot Wing sauce at 5 ounce. We love things spicy! I also rubbed the chicken with a bit of cayenne, pepper, garlic, and onion before placing it in the sauce. Didn't crispen in the oven, but I didn't leave it in that long because I do not like dry chicken. Best served with some starch - rice or potatoes.

Microwave Tacos

Like other reviewers I was mainly looking for the taco seasoning. I am a bit scared to cook meat in the microwave (worried about the texture). I actually used 1 lb turkey, cooked it stove top, drained a bit of the grease, and added the seasoning mixed in water and let it cook on lower heat for about 5 minutes. I actually doubled the cayenne for that little kick too!

Oven Fresh Seasoned Potato Wedges

First time making wedges. This was pretty good, not as good as what I've had in some restaurants, but good and easy enough to make again. Make sure you spray the foil well so it does not stick.

Spinach Lasagna Rolls

This was okay. I did not have cream cheese so used ricotta instead. It's very plain. I added garlic powder, oregano, and italian seasoning to the cheese mixture. I think I would have preferred regular lasagna.

Best Ziti Ever with Sausage

Used sliced sausage sauteed with diced onion because that is what we had on hand. Next time, we would put some oregano, garlic, and red pepper flakes.
