Sweet Onion Pie

This is a quick and easy recipe. After you saute the onions and then they bake in the oven, you really understand why the recipe title starts with sweet. We added some cajun seasoning. Maybe extra sharp cheddar?

Crustless Cranberry Pie

Ricotta Cheese Cookies

These were quick to mix up. I used a cookie scoop which made things easy too. They didn't spread much, so were rather rounded. When the cookies were ready for tasting, I loved the fact that the outside was crisp and the inside cake-like. I added a tsp of cinnamon to the batter. I iced half of them since hubby likes 'em less sweet. I substituted 1tbsp almond extract for the milk. Yum!

Banana Split Cake II

This dessert makes a lot & therefore would be great for a bigger crowd. The cream cheese makes the dessert very rich, so a small portion is all that's needed. The cream cheese mixture was the only thing that gave me a bit of a probem. It was very thick/sticky & hard to spread over the crust. Although adding another cream cheese would solve the problem of not enough, I think that adding some type of liquid to the mix would help it spread easier.

Chewy Coconut Cookies

The reviews made me give this a try. They were super easy to make. I used unsweetened coconut since it didn't specify. Hubby liked them. I thought they were just OK, but I'm not a coconut person.

Slow Cooker Chicken Cacciatore

After cooking for 7-8 hours, the chicken was falling apart & tender. I was hoping for something thicker, so poured into a pot on stove & cooked it down some(added cornstarch)...to no avail. I ended up adding the pasta-bowties-to the whole thing. Maybe using less sauce IS the trick.

Smothered Mexican Lasagna

This was an easy dish to prepare. The flavor was yummy, even with low fat dairy products. I went by the recipe except for swapping out the tomatoes & chilies for 1 can of Rotel. I wasn't sure what to do with all the extra liquid in the meat mixture, but hubby dumped it over the top & it didn't come out soggy. I think I'll use corn tortillas next time...reminds me more of enchiladas.

Apple Cranberry Streusel Custard Pie

This was the first apple pie I've ever made. It was easy as pie! I had a craving for apple cranberry pie & this hit the spot :) I'll be going out to buy cranberries to put in the freezer, so I can have this throughout the year.

This was quick & easy! I didn't change a thing. I loved the fact that I could make these in 1 pan & then stick the whole thing in the frig. I was looking for a recipe for a cookie exchange...my hubby said these were a winner!

Speedy Oven Fudge

I used a "lighter version" of butter the 1st time I made this & it didn't set. The 2nd time was quick, painless & delicious! I used the real thing...don't substitute light or less calorie butter.

Artichoke Chicken

Seven Layer Taco Dip

I think I included everything except the kitchen sink in this recipe! It was yummy. I used a can of drained Rotel & some leftover salsa I'd drained...just so it wouldn't get soggy. Also added a layer of guacamole.

Tart Cherry Salad

Took this to a Thanksgiving dinner & it was a hit! It got lots of compliments. I liked that it was tart and cut some of the richness of all the other foods. Could make a simple "dessert" - cleans the palate...so to speak

Baked Spaghetti Squash Lasagna Style

This was easy to put together once I got the squash cut in half! The sticker on the veggie recommended putting it in the microwave for a bit to soften the skin. I'll do that next time. I used one can of stewed tomatoes, a small can of tomato sauce & a bit of water. We just put the sauce over the strands without the layering. I'm thinking cottage cheese & capers might be tasty next time.
