Delmonico Potatoes

Made this for Easter dinner yesterday. The family really liked it. I used thawed frozen hash browns instead of grating potatoes and I also used shredded Colby jack and cheddar cheese. I just mixed everything together instead of doing the layers. Otherwise followed the rest of the recipe. I think next time I will reduce the sour cream. I found the flavor too strong. Will also add garlic.

Spicy Sausage and Rice Casserole

I made this last night for my family. After reading the reviews I made a few adjustments. Since my family does not like real spicy food I used one roll of Jimmy Dean hot and one roll of Jimmy Dean mild sausage. I did not have any red peppers and did not miss them. I chopped up an entire onion. Used about 1/2 tsp black pepper and 1/4 tsp of red pepper. I added a can of Buschs chili beans in sauce. I prepared the entire dish in my dutch oven on top of the stove. Brought everything to a boil and let it simmer for 20 minutes. It was really good.

Mom's Chicken Cacciatore

This definitely tastes better the next day! I basically followed the recipe but added a few things based on reviews. I used garlic salt when I seasoned the chicken and added some paprika. When making the sauce added a small can of tomato paste. Increased Oregano to 1 tsp and also added 1 tsp of basil leaves and 1 tsp of marjoram. I like my sauce with a little sweetness so I added 1/4 cup sugar. Served with penne pasta. Was really great!

Baked Penne with Italian Sausage

This was very good. I looked at some of the reviews and made some slight modifications. I doubled the sausage, onions, tomato paste, and tomatoes. I added 2 tomato paste cans full of water, 2 Tbs of butter, 1 tsp oregano, 1 tsp of basil, and 2 bay leaves. The sauce was delicous. If I had not increased the ingredients it would have been very dry. I also found that the penne pasta in my store was a 16 oz box. This filled up a 13x9 pan and we had about 12 servings. I also added some pepperoni on the top. The kids loved it.

Chicken and Shrimp Jambalaya

I made this recipe for New Years and it was a hit. I have tried to make jambalaya before and it came out mushy. I followed everyone's suggestions and used 1.5 cups of rice. I used Uncle Ben's Converted rice. I elimnated the ham and increased the shrimp to 2lbs and the chicken to 3 cups and used 1 can of chicken broth and reduced the water by one cup. It was not spicy enough so I added two teaspoons of Tony Chchere's cajun seasoning and it came out great. I highly recommend this one and will continue to make it
