Grandma Johnson's Scones

Delicious! I added lemon juice, extract, and zest based on the suggestions of a reviewer. However - it's just crazy to make 12 out of this recipe! I divided further and made 18, and they were still HUGE! Better would be to divide the dough in two before flattening it in a circle then cut each circle into 12 wedges to make more reasonable-sized portions.

Black Bean Vegetable Soup

Delicious recipe. I had a couple of ears of corn that I had BBQed, so I cut the kernels from them instead of using canned. Really good soup recipe!

Basic Indian Curry with Paneer

Very good as written. My variation is to add some cubed potatoes in addition to the peas, skip the peppers and up the spices, and use condensed canned tomato soup instead of the pureed tomatoes + ketchup. This variation is by far and away the best curry I've ever made.

Delicious Mushroom Soup

Really very good. I have the following pointers: use baby bella mushrooms instead of button, use jasmine rice, and really do saute the veggies before adding the broth.

Portobello Penne Pasta Casserole

I must have done something wrong. I did use butter instead of margarine, and I did use salt instead of soy sauce, so that may be it. I found it to be overly rich and bland-tasting. Maybe it needs a stronger-flavored cheese, like parmesan. I will try that next time, and also use less spinach, as the spinach was overpowering.
