Asparagus, Feta and Couscous Salad

Awesome. I cooked the couscous in chicken broth and the White Balsamic is the way to go!! Much more visually appealing. YUMMMMM

Puff Pastry Salmon

LOVED IT! I did change it a little. Instead of pesto, I used Garlic & Herb feta. I also, as suggested, rolled the pastry dough out before using it to make it nice and thin. Finally, I did use frozen leaf spinach and just dried it completely with paper towels. It was our Valentine's dinner and the hubby devoured it! I served it with au gratin potatoes. DELICIOUS! We cut it in sections like a hoagie sub because they are so big! We only finished one of them and we were STUFFED! Great recipe!

Sweet Potato Casserole I

They were the hit of Thanksgiving! I omitted the orange zest based on other reviews and I did add the coconut. They were very sweet, but sweet and me get along pretty well - so no complaints! :-)

Jammin Good Bars

Very simple and DELICIOUS! I use butter flavored Criso to add a little more flavor. I also add a half cup of finely chopped nuts (whatever I have on hand - almonds, walnuts, pecans, etc) to the crust and topping mixture. YUM!!!!!

Spiced Pumpkin Dip

I was not blown away with this recipe. I loved the idea of it and it sounded like a nice change of pace, but I wouldn't make it again. It wasn't finger licking good, but it was not bad.

Frosted Walnut Brownie Pie

Very tasty...really good texture. I doubled the recipe and baked in it a pie pan. Turned out great! It was a hit at my husband's birthday party. OH, also, I quadrupled the icing recipe to make enough to cover the whole thing. I will definitely make this again!

Easy Alfredo Sauce I

EXCELLENT recpie and soooo easy. When it was done, it was not quite as thick as I wanted. So, I added a tablespoon of cornstarch and brought it to a quick boil to thicken it up a bit (depends on your preference). I will make this over and over and over.... Yummm!

Wheat Crackers

Very good cracker recipe - I used these for my daughter's bunny themed b-day party....used a bunny cookie cutter for the crackers. I brushed them generously with olive oil and sprinkled with salt and garlic powder before I baked them. They were a major hit! I served them with a dip, but people were eating them plain! :-) make sure you bake until brown so that they are crispy!

Pasta Sauce with Italian Sausage

This was the best sauce I have ever tasted! The longer you let it simmer, the more flavorful it becomes. I skipped the sausage from the recipe and added a bit of flaked red pepper. EXCELLENT!
