Baked Parmesan Tilapia

turned out great, easy to make and you can modify the seasonings to taste, will definately make again - have done something similar with boneless chicken breasts that is also delicious!

Italian Wedding Soup I

soup was great!! I sauteed onion, celery, shredded carrots, garlic in a little olive oil, added chicken stock, a little beef stock, bought mini meatballs at Trader Joe's and added a bag of organic baby leaf spinach and made orzo on the side, easy, fast and tasted great!!

Spicy Oven Fried Chicken

made this tonite as written - only thing I did was cut the 4 chicken breasts in 1/2 so they were thinner - it was delicious, will definately make again and use leftovers in a salad tomorrow

Raspberry Oatmeal Bars

just made these with a few changes, they are delicous even warm, just a tad too sweet. I took out 1/2 cup of the white cake mix and replaced with oats, add a large handlful of chopped walnuts to the mix and took out about 2/3rd and added 1 egg, 1 TBS milk, 1 tsp vanilla to bottom mix. Spread low sugear apricot butter and a handful of choc chips and put on remaining topping, baked for 28 minutes, they came out great!!

Artichoke Chicken

this was delicious, made it for the 2nd time today. used 1/2 cup lite sour cream with a little lite mayo and added a little chopped red pepper and chopped onion to mixture with a little bit of shredded cheese. cut the chicken up into chunks, dredged in a little seasoned flour and browned before baking everything for 1/2 hour. made instant brown rice cooked in chicken broth w/some peas in it, it was very good together

Sugarless Rice Pudding

this is great for a quick sugarfree rice pudding! I made 6 servings of Uncle Ben's instant brown rice and let it cool a little. Followed the rest of the recipe as written, just added 1/4 tsp of pumpkin pie spice and some extra milk to make it creamier and topped it off with a dash of cinnamon. Tasted good lukewarm, I'm sure it'll be better in the morning once it has cooled in the fridge. Great recipe for diabetics also!

Easy Baked Chicken

Great, easy recipe! I used the thin sliced chicken breasts with ranch dressing (put in ziplock bag for easy coating), then covered in italian bread crumbs with some garlic powder and baked for 30 minutes - delicious!

Strawberry Salad II

This was delicious, very light and refreshing! My husband doesn't like jello or angel food cake and he really enjoyed this. I used 3 of the 3 oz. strawberry gelatins and 1 8 oz. cool whip and 16 oz bag of frozen mixed berries and it came out great!

Easy Spicy Chicken and Rice

My husband and I really enjoyed this recipe! Very easy to make. Only made a couple of additions, added another 1/2 cup of rice and a soup can of 1/2 milk and 1/2 water and some garlic powder, seasoned the chicken tenders and uncovered after 45 minutes and added a mexican blend shredded cheddar cheese on top and left in another 15 minutes - delicious!

Chicken Hurry

chicken dish was delicious, only made a couple of minor changes: doubled the ketchup and added a squirt of bbq sauce with it to make 1 cup, doubled the water, left brown sugar as is, a little less onion soup mix than whole package. Used 5 reg skinless boneless chicken breasts. Served over plain white rice, was delicious! Everyone enjoyed! Also, added a bit of black pepper and garlic powder on chicken breasts and put them over a bed of onioins before pouring sauce on top...

Green Velvet Soup

Made the soup for the first time, I thought it was delicious! I only used 1 small potato and I sauteed the onion and celery first with a little minced garlic in olive oil before adding the fat free chicken broth. Half the batch I pureed with hand blender and the other half left as is, my husband and mother in law preferred it without being pureed, I liked it both ways. Can also top off with a little grated parmesan cheese. Would make again, hardest part was the chopping :)
