Shrimp Scampi III

Liked this recipe, simple and easy. Had pasta going while I cooked scampi, and added at last minute. Also after looking at other recipes decided to throw in some red pepper flakes while the garlic and shrimp were being sauted. Also right before the bread crumbs I did also throw in some sliced green onion. Husband loved it, tasty with a little kick!

Caesar Salad Supreme

Totally love this recipe, although like many did not have (or use) any anchovies. Also did not have any Dijon mustard, just regular mustard. Still tasted great! With the croutons, I ended up actually having to bake to get even browning. Baked at about 375 degrees.

Wow, very moist, great marinade. Rated as 4 stars, could use a little zip in the marinade. Took about 20 minutes to cook on grill.

Rich and Creamy Tomato Basil Soup

Loved this recipe! I actually did not have tomato juice so used 1/2 tomato sauce, 1/4 water and 1/4 chicken stock. I did puree the cooked tomatoes, but found the puree did not affect the chopped basil much, so would chop a little bit more before I added to processor. Per reccommendation I wish I had added a little more basil! Just added the cream to taste...wonderful easy, and tasty soup recipe.

Marinated Grilled Shrimp

We loved this recipe. had to use ketchup and hot chili sauce, did not want to open whole can of tomato sauce. Also cut up some veggies and grilled all with the sauce.

Summer Lamb Kabobs

Cut recipe in third....mostly 2 tablespoons of the Dijon mustard. marinaded for about 2 hours. This was really tasty. Did not add any of the fruit, just peppers, onions and mushrooms. Dredged them in the sauce when I put on the skewer. Served with spinach salad and pilaf, great!

King Ranch Chicken Casserole III

I really liked this recipe. Pretty much followed the recipe, except I did saute the onion and peppers, adding some cilantro right at the end. Tore the tortillas (pkg. of 12) into quarters, and layered per instructions. I did let this set-up after cooking, and even though I used a can of broth (about 1 3/4 cups) found the sauce just right. Husband loved, great left-overs!

Chicken Enchiladas II, Chile Verde

Still like corn tortillas for the flavor, but this is very simple and easy. Not bad for flour tortillas. Used white onions, added some Mexican chicken seasoning, and some black olives. This is definitely a recipe you can "play" with.

Chicken Noodle Casserole I

I thought this recipe was really good, and easy to make. Cut ingredients in half, and actually added saute mushrooms, garlic, green peppers, and green onions. At last minute also threw in some artichoke hearts as I stirred in the chicken and noodles. Turned out great, and filled a 9 x 9 casserole dish.

Like others, this is really simple and very tasty. I did cut this recipe in half and added a pinch of flour, and some parmesean. Quick dish to cook, so have the rest of your meal ready!

Crunchy Lemon-Dill Salmon

Thought this was really tasty. My husband liked it so much I taught him how to make it. Simple, add a green salad some rice, and you have a great dinner. (We made it with a defrosted frozen salmon fillet and was fine...)

Chicken Marsala

Followed recipe as noted, stayed with the sherry and marsala, but did add garlic at the chicken browning, and chopped onions with the mushrooms. The flavor is great, sauce thickened up fine without adding additional ingredients. But I made sure the chicken was fully coated with the flour mixture. Really like the flavor!

Angel Hair Pasta with Shrimp and Basil

Really liked this recipe, easy to do. Followed previous comments, used (2)14 oz. cans of tomatoes, and lightly drained. Also was very careful about quick cook time with prawns. Also did this with a half recipe, and used pre-cooked frozen shrimp. Cooked them about 1 minute in the garlic, pulled them, added the tomatoes, etc. and let that step really warm them up. Preferred un-cooked shrimp, but if you keep cooking time to a minimum, pre-cooked can work in a pinch. Fresh basil adds a lot of flavor!

Chicken Stir-Fry

This may be slightly bland, but a great starter recipe to begin to add your own touch. I used 4 half breasts, and I think I had too much meat. Wondered about substituting shrimp. Nice simple dish.
