Mujaddara Arabic Lentil Rice

With a few alterations, this has become my de-facto side dish for lunch. I cut the recipe down to 1/2 cup lentils and 1/3 cup rice, with less garlic and cumin. I use chicken broth to cook the lentils and add chopped onion at the rice cooking stage. I divide it up into thirds for lunch, giving me something filling and tasty that's under 200 calories!

Chocolate Chocolate Chip Cookies I

With only 1 cup of sugar and 1 cup of mini-chocolate chips (to better spread the chocolate goodness), these cookies are one of my favorites. I freeze them and have one whenever a chocolate craving hits me.

Easy Oatmeal Muffins

Despite the fact I made a "cake" shaped giant muffin, it turned out good. I used brown sugar instead of white, along with some cinnamon and ginger. I think next time I'll add some walnuts or apples to make it perfect.

Pecan-Oatmeal Pancakes

These turned out great! Instead of pecans I added cinnamon and chopped partially-cooked (in the microwave with a dash of water, no sugar) apple bits. No syrups was necessary!

Lower Fat Banana Bread I

The basics are good, but next time I'll use less oil, sugar and milk. (This recipe is fine if you eat them without syrup, but add syrup, and it's too sweet!)
