Speedy Chicken Enchiladas

Wished I had all the ingredients but ended up still having a good dish, boiled chicken breasts with water seasoned with salt and pepper and chicken soup powder, then chopped into small cubes and left in fridge till later. Mixed the soups and a can of diced tomatoes ( had no salsa) had some left over corn and rice from dinner the night before and that went in too. Used 4 large costco tortillas rolled up and put the extra sauce on top with shredded cheese. I baked at 350 for 20 minutes then turned the broiler on for 2 minutes to brown it up. My family loved it and hubby took leftovers to work. I will try next time with the salsa, probably would make it even better.

Easy Baked Chicken

Fantastic, very moist and yummy. I used spicy french dressing and mixed seasoned bread crumbs with Romano grated cheese, I used Costco chicken breasts that are very plump, so it took longer to cook through, 350 for 45 min. Served with cheesy rice and peas.. kids loved loved it, and that does not happen often.

Fresh Pear Pie

This was wonderful, we made it twice in 1 week, found that we needed to increase total baking time to 45 min at 350, otherwise it was too soggy. We mixed all the ingredients first in a big bowl with the pears, that way it was evenly distributed, I think I will try some golden raisins or cranberries for my next pie.

Banana Muffins II

Fantastic, I used 1/2 cup white sugar and 1/4 cup brown sugar and added about 1 tsp vanilla. It made 36 mini muffins baked at about 12 minutes. Made it for a play-date and it was gone in a minute.

Banket

I was looking for a recipe to surprise my best friend who is Dutch, found this and thought great, will try. I made a double batch of dough and let it sit in the fridge over night. Then I went searching for the almond paste, I had one can and then got 2 almond pie filling per other comments. I used 1 1/2 cans of the filling and 1 can paste, I think next time I should use 2 of the paste and 1 of the filling, it came out way too runny, but what I did is make a very large flan, I rolled the dough in the pan and up the sides, filled with the filling and then made a lattice on top, I did use milk to brush the top and sprinkled sugar, baked at 425 for 20 minutes, it was amazing. Best if put in freezer for 2 hours to make it set faster before cutting into it. I still had enough dough and filling and I used this to fill a long loaf pan ( mine is 16" long) with dough then the filling and draped the rest of the dough on top to seal it. My friend just loved it and everyone else at the party could not stop eating it. By the way, it is called Banketstaaf if looking for the right name for this dessert. Yummy yummy, can't wait to make it again and try diff fillings too, as the dough was incredible.

Simple Garlic and Basil Pesto

This is the 2nd year I made it, and it is fantastic. I did not use the chili powder as my kids can smell and taste that from a mile away, I find that using 2 TBSP of the fresh garlic gives it enough zing. Toast the pine nuts and have omitted the other nuts. I have frozen it in the ice-tray and then moved to a freezer zip-lock bag. I served it with grilled chicken strips on top of fresh pasta and my guests and family could not stop slurping it! When you sautee the chicken strips or just after you removed the pasta from the boiling water, add 3 cubes of the pesto and it will melt within minutes.

Banana Crumb Muffins

Very moist and full of flavor. I did use oil instead of butter, added 1 tsp vanilla, cinnamon and nutmeg to batter. It made 12 large muffins but it took 22 minutes to be done. A keeper for sure.

Slow Cooker Beef Stew IV

Really good, it took about 45 minutes to prep. I doubled the meat, let it marinade in about 1 cup of red wine and minced garlic. Then tossed them in the flour and seasonings, and browned little at a time as to not crowed the meat. I used 2 cups of beef broth instead of water and used another 1 cup of red wine and dried fresh thyme from my garden. It was amazing..

Granny Mabel's Best Bar Cookies

Just amazing! I only used 1/2 cup of brown sugar and 1 cup of butter. Did not have rolled oats, used 6 instant oatmeal packages instead, and still it was fantastic. Everyone raved about it and could not stop licking their fingers.

Honey Roasted Red Potatoes

Salsa Cheese Boule Dip

This was fantastic, I did not double it, and it made plenty for 10 adults. I baked it in a glass dish, and served scooped chips around it. I did add cumin and hot sauce, used fresh medium heat salsa probably 1 1/2-2 cups.. will be making sure to make this often for my gathering or to take with me.

Chocolate Walnut Rum Balls

This is fantastic and easy to make. I used Malibu Rum coconut flavor and it added that special flavor. I then made 3 batches, 1 rolled in coconut flakes, another rolled in regular sugar, and the last in powdered sugar. All came out very very yummy. A keeper for sure.

Mom's Zucchini Bread

This is wonderful. I added an 8oz can of crushed pineapple and a handful of chocolate chips.. my husband loved that especially with some butter on top while still warm. It made it nicely moist. I froze one loaf, not sure why, as the first one was finished within 1 1/2 hours. Got the Zucchini Coconut loaf in the oven right now from this site, will add remarks when that one is out.

Marinated Chicken Breasts

This is by far the best tasting chicken ever. It was wonderful on the grill, I followed same directions but added fresh garlic and probably 1 1/2 tablespoon of hot horseradish. ( I love the stuff), it did not make it hot just zesty. So many complements, I actually used a large bag from Costco (Sams club) of frozen chicken breasts, this was enough to marinate the entire bag. Just open the bag and pour in the marinate after you mixed it. Then close the bag and put it overnight in the fridge, the breast defrost and suck in all the marinate at the same time. Yummy!

Hard Chocolate Glaze

I thought it was good, tasted better the next day, unfortunately it just tasted like chocolate melted and hardened. Not much else, I do like a little more flavor then that. Otherwise, quite nice.

Apricot Brisket

It was good but not great, used a can of apricot nectar which helped and chopped all apricots, I really liked it, subtle taste though, and I do prefer a stronger flavor. Hubby said it was fine, which means not the best. Probably will keep looking for the best brisket recipe, I am sure it is out there.

Roast Sticky Chicken-Rotisserie Style

What a wonderful recipe. I used Costco whole chicken it comes 2 to a bag, very large ones, marinated overnight and baked for 5 hours. wow. Just falling off the bones. Great with some rice pilaf and steamed broccoli.

Zesty Slow Cooker Chicken Barbecue

This was amazing, had guests for dinner, they could not stop raving about it. Used 5 frozen chicken breasts, cooked in broth for 3 hours on high, then shredded, added rest of ingredients, and cooked for additional 2 1/2 hours on low. Was just wonderful. Served with sauteed onions, zucchini and whole garlic cloves, red steamed potatoes and rolls on the side. Nothing left for the first time ever.
