Dark Chocolate Cake I

I wasn't so impressed with the taste of this cake, and i don't see how anyone gets 3 layers out of this. next time (hypothetically) i'd just make the 2 layers, because they were so thin as per this recipe as is ... and i really greased and floured my pans and the cake still stuck and fell apart. A few people had suggested using coffee instead of water, and i'd suggest that too.

Kentucky Pecan Pie

i really did not care for the taste - more like caramel pie with pecans. this is easy and quick, and i have to say, my parents and brother liked it. but i definitely love my mom's recipe a whole lot better. my husband is not a sweet-eater, but he does like pecan pie. i made two (one for my brother's birthday and one for my husband's); my husband barely touched it, and my 3-year-old wanted nothing to do with it. sorry, but i won't make this again. 4 stars because of the reviews from mom, dad, and bro. i would have given 3 otherwise.

Chickpea Salad II

i followed the recipe exactly, and split it up into servings - put each in a small tupperware, and i had light lunch for almost a week! you really do have to let this one chill, no cheating! light and tasty - thanks!

Pad Thai

i also doubled the sauce, and used some seasame oil instead of vegetable ... followed many of the other suggestions here. i enjoy more the sukhothai pad thai recipe from this site. i'll stick to that one instead, even though this wasn't a bad recipe.

Molten Chocolate Cakes With Sugar-Coated Raspberries

my father loves chocolate lava cake, and mentioned it the other night. i told him i'd be happy to make him some -and these really hit the spot. my only word of caution is, spraying the paper cups (i even used foil ones) with vegetable spray wasn't enough to get them to not stick. next time, i will line each with a bit of shortening and sugar (a la martha stewart). i had them in the fridge for a while too ... brough them out during dinner, and popped them in the oven while we were clearing the table. they even tasted delicious the next day, cold. great recipe pam! a keeper!

Honey Barbecue Sauce

too much steak sauce - i simmered some bar-b-q in it, and that helped. the sweet and sharp flavors just didn't meld together well. it was good, not great, but i won't make it again. thanks anyway! 4 stars anyway, since i think barbecue sauce is a very personal thing ;)

Beer Margaritas

we are beer-and-liquor drinkers, so margaritas are never on our menu. but we tried these, and were very pleasantly surprised. the beer really takes away the extreme sweetness, but adds a great flavor. we'll only use this for margaritas, i'm sure. thanks!

Sukhothai Pad Thai

i'm giving 4 stars because this was really good, and i'll definetly make it again, but i also followed a lot of suggestions made by others, so i feel the original recipe is lacking. changes i made: 1/4 c rice vinegar instead of white, lime instead of tamarind (but i will use tamarind as soon as i can find it!), 1/4 c seasame oil instead of 1/2 c vegetable, didn't add the salt or sugar at the end, added 2 tbsp crunchy peanut butter to the sauce, used fish sauce instead of soy sauce (although i added a splash of soy sauce to both the sauce and tofu/egg mix), didn't use radish but did add some red pepper flakes, didn't use paprika at all, and added some cilantro at the end. phew. i agree it was just a bit too sweet in the end, even without adding the sugar in the third step; i think rice wine vinegar would be ideal. i also used chinese noodles, personal preference more than anything. next time, i would use a bit less sugar and add some green onions, also as suggested. thanks, nan - it was still great!

Potato and Bean Enchiladas

i'm a vegetarian, but i'm also lactose-intolerant (lots of interesting things happen to you after you have a baby, consider yourself warned ;) ), so i made these without the queso. i know, however, that it would have made a big difference with it added, to balance the other flavors and add some creaminess. next time i might add some dairy-free sour cream, for texture if not for flavor. even without queso, these were really good. i had to cook the potatoes longer than 25 mins, but didn't dare cook the enchiladas longer than the 20 suggested. i'd add in some garlic with the potatoes next time, and probably a jalepeno or two. overall a good recipe, one i'm sure i'll make again. thanks!

Triple the Ginger Cookies

i didn't think they were a pain at all. i also didn't find them "hot", and would probably increase the candied and/or ground ginger next time. either way, these are delicious, and i don't think i'll ever make another kind of ginger cookie. my father is a huge ginger-holic, and i can't wait to let him try these. even my three-year-old enjoyed them. thanks!

Baker's Secret Pie Crust

my food processor is ridiculously small. so when i was trying to fit everything in, taking half out, cutting in frozen butter by hand ... i thought, this had better be worth it. and it absolutely was. hopefully, though, i'll have a bigger better food processor before i want to make pie again. but i will use this recipe every time. thanks!

Chocolate Chip Pie I

this is good (good enough to rate well!), but when they say rich, they mean it. this is so rich, in fact, we probably won't finish it ourselves, and it will get passed on to the boys who work with my husband. likewise, i probably won't make it again any time soon ... but only because it's just too much, which isn't always a bad thing! i used about 1/2 cup more chocolate chips, and no nuts, just because i didn't have any. had to cook it an extra few minutes, too, but that's just my oven. i'd omit most of the salt, as well.

this just didn't work out well for me, on account of the awful avocados available from my local grocery. i did my best, and the taste was fine, but i feel i can't give more than four stars - also can't give less because of all that was my fault. i'm sure i'll try again.
