Bacon Roasted Chicken

i did not add the beef stock; i did add about 1 1/2 cups of water and basted with that, but next time i would add the 2 cups, maybe of chicken or vegetable broth. i also added a bit of poultry seasoning to the chicken. this took a LOT longer than 1 hour and 15 minutes to cook -- almost twice as long. i know my oven is old and all but still ... even so, everyone liked it. it was relatively easy. i think i'd do this again, but allow for more cooking time, and experiment with different seasoning.

Pumpkin Chip Muffins

Best of the Best Blueberry Muffins

i agree these are a little like cake; but who cares, they're awesome. the simple sprinkling of sugar on the top is fantastic, since i always get boos from my boys about "strudel" toppings. u had to use a bit less blueberries, but next time i will use the recommended amount. i really suggest trying these. thanks for the recipe!

Cream Sauce With Herbs and No Dairy

followed additional instructions, and this came out wonderfully. not exactly like traditional, straight-up cream sauce, but like "a creamy" sauce. i used vanilla soy milk - oops. still came out great; also used spike, which is a great seasoning, but left out the dill (personal perference). i know that i will continue to tweak this a bit, and use it again and again. thanks, from vegans and lactose intolerant sauce lovers everywhere!

Chocolate Mice

these are really cute, but didn't taste good enough for all the effort. even my 4 year old, who delighted in making them and looking at them, wouldn't take more than one bite. if they were only to look at, i could have made them out of playdoh. plus, after chilling, it was reallt hard to get anything (almond ears, tails, eyes) to stay in place.

Honey Walnut Shrimp

too much mayo, and i really love mayo. but it just made it unappetizing. and i added a good amount of cayenne for some kick, since it was simply too boring without it. i've never ordered this in a restaurant, and i can see where another recipe for the same dish would be good, but this one just doesn't strike me as the one.

Old Fashioned Peach Cobbler

more like peach pie. plus, the latice work is a pain for cobbler. my husband loves peach cobbler, so i made this for his birthday. he had 2 (yes two) bites and the rest went bad sitting in the fridge. i'll stick the southern peach cobbler recipe from this site.

Churros

well, for starters, unless you've got heavy duty pastry bags, don't use the bags. roll them by hand. they are prettier with the star shape, but you WILL go through more than one bag. even so, they are really tasteless, and burn very easily, which takes away the "easy" part of the recipe. my son just licked off the cinnamon sugar. the next day, they were greasy and limp. yuck. maybe churros are different elsewhere, but these sure didn't remind me of the kind we get here in south texas.

Buttery Soft Pretzels

these were really good and fun to make, but the bottoms did burn, even with my baking sheet far from the heat. maybe next time i will cook at 400, for a bit longer? we double coated in butter (before and during cooking) and sprinkled on salt each time. we'll do this again.

Mixture for Meatballs, Meatloaf or Burgers

i had doubts about the steak sauce, but since my husband loves steak sauce, i thought i'd give it a try. i also used bread crumbs instead of soaked slices of bread. i made this for meatballs, and simmered them in marinara. they didn't fall apart, but they were awfully mushy. i won't make this again.

Sea Bass with Honeyed Apples

this was just such a different taste that it makes it hard to rate. i used tilapia and crushed ritz instead of sea bass and bread crumbs, and cut down on the toppping (i had 2 small fillets and used half a large apple, and it was plenty). i used the tilapia mainly because it really absorbs flavor, but next time i will go looking for sea bass. i made this for myself (i cut the recipe way down) for rosh hashuna, when it is traditional to eat dishes with apple; my family made a chicken dish, but i don't eat meat. i think this may become my rosh hashuna dish of choice, but perhaps only for the holiday.

these were so odd ... as others have noted, not sweet but strangely addicting. i added some almond extract, which i think helped the flavor. my husband ate them up, and the man is not a sweet-eater, so there's that. i would definitely chill the dough before rolling it out.
