Tuna Curry in a Hurry

this is just as it says -- tasty, easy, and fast. i even used lactose-free sour cream, and it was awesome. this is going to become a regular. thanks for the recipe!

Favorite Old Fashioned Gingerbread

as per the suggestions of others, i added applesauce and doubled the spices. i thought it was wonderful, very moist and flavorful -- i can't imagine this recipe without the doubled spices at least, since it seems to me it would have been very bland without them, perhaps accounting for the "too molassesy" comments. my 4-year-old son helped me make it, and gobbled it up. i will make this again.

Pepperoni Bread

used pillbury french bread loaf -- makes it easy because you can unroll the loaf. the kids and adults loved this; i also made one with soy cheese and meatless pepperoni and it was just as successful. i don't think you need the egg. but i think using pizza or marinara sauce as a dip is a great idea because it was dry. a fast, easy, and fun treat.

White Chocolate Amaretto Cake

very moist, dense and delicious. i boiled the glaze for ten minutes and what i got wasn't glaze, but toffee. it looked nice and tasted great but was essentially like coating the cake in candy. needless to say, i didn't add frosting or almonds. i think the cake would have been much better with the frosting drizzled on and almonds added; or with a much smoother glaze and the almonds. any vanilla frosting would surely be overkill. everyone loved it, but if i make it again, i'd definitely tinker with the topping.

Italian Spaghetti Sauce with Meatballs

i've learned to try to save 5 star ratings for truly remarkable recipes. this was good, and everyone enjoyed it -- but from my husband i got "too tomatoey" and "it was okay". i thought it was tasty but not particularly memorable. simple though. i used one can of whole tomatoes and two diced. this recipe and a whole box of pasta was enough for 4 adults and 2 kids, plus leftovers.

Tofu Lasagna

i used soy cheese and added zuchinni and mushrooms, and also doubled the sauce. it definitely needs the veggies for substance. i thought this was fantastic, but got only "it was okay" from my family, hence the 4 stars. i would make this again, and continue to tweak it.

Vegetable and Feta Latkes

i eyeballed the amounts of zuchinni and potatoes and carrots, and probably used more zuchinni. i also added a bit of mrs dash to spice it up and used mediterranean feta. be sure and drain the veggies well, and fry them until crispy, otherwise you'll have soggy latkes. i got absolutely rave reviews from my family, and i'm sure these will be a yearly request. thanks for the great recipe!

Grandma's Corn Bread Dressing

i made this without onion, since i can't handle them, vegetable broth, and added green bell pepper. as per other reviewers, do not use a conbread mix with sugar in it (or make your own cornbread to avoid the chance; besides, it's fun)! also, use broth that's low sodium or omit the added salt. my husband loved this so much i made it again for him 2 days later. this is a great dressing recipe!

Tofu Turkey II

i wish i could give this a higher rating. i was thankful for other reviewers, since it at least gave me a good place to start. i added poultry seasoning as well as thyme, sea salt, and pepper to the tofu; i actually made this twice, on thanksgiving and a few days later. both times i had to use firm tofu, and i'm not sure xtra firm would have made a difference. the mold worked very well, but i'd recommend leaving it to chill for as long as you can; two hours was just enough the first time and not quite enough the second time. the first time i used my cranberry sauce as glaze and the second time i used the bar-b-q sauce mix; the cranberry tasted better but the bar-b-q sauce looked better. i made my own stuffing as well, so that wasn't an issue. both times there were not leftovers, but i attribute that more to the flavor lended by the stuffing. the tofu itself was mushy and not very tasty (like i said, i spiced it up as much as i could, but was afraid to go too far and wreck the blending of flavors) and didn't look very appealing on the plate. the concept here is good, but falls flat in actuality.

Bacon Roasted Chicken

i did not add the beef stock; i did add about 1 1/2 cups of water and basted with that, but next time i would add the 2 cups, maybe of chicken or vegetable broth. i also added a bit of poultry seasoning to the chicken. this took a LOT longer than 1 hour and 15 minutes to cook -- almost twice as long. i know my oven is old and all but still ... even so, everyone liked it. it was relatively easy. i think i'd do this again, but allow for more cooking time, and experiment with different seasoning.

Best of the Best Blueberry Muffins

i agree these are a little like cake; but who cares, they're awesome. the simple sprinkling of sugar on the top is fantastic, since i always get boos from my boys about "strudel" toppings. u had to use a bit less blueberries, but next time i will use the recommended amount. i really suggest trying these. thanks for the recipe!

Cream Sauce With Herbs and No Dairy

followed additional instructions, and this came out wonderfully. not exactly like traditional, straight-up cream sauce, but like "a creamy" sauce. i used vanilla soy milk - oops. still came out great; also used spike, which is a great seasoning, but left out the dill (personal perference). i know that i will continue to tweak this a bit, and use it again and again. thanks, from vegans and lactose intolerant sauce lovers everywhere!

Chocolate Mice

these are really cute, but didn't taste good enough for all the effort. even my 4 year old, who delighted in making them and looking at them, wouldn't take more than one bite. if they were only to look at, i could have made them out of playdoh. plus, after chilling, it was reallt hard to get anything (almond ears, tails, eyes) to stay in place.

Honey Walnut Shrimp

too much mayo, and i really love mayo. but it just made it unappetizing. and i added a good amount of cayenne for some kick, since it was simply too boring without it. i've never ordered this in a restaurant, and i can see where another recipe for the same dish would be good, but this one just doesn't strike me as the one.
