Coconut Poke Cake

Reviewed: Apr. 29, 2006
we didn't know where to get cream of coconut, either, so we used coconut milk and condensed milk. i had to pour it over the cake in batches, letting it sink in, so that it wouldn't overflow. we made our own whipped cream, too. overall this is really good, VERY sweet and coconuty. there was too much milk/milk mixture, making the cake just beyond moist. if i make it again, i'll just use less. there's a lot of room for addition here, too. thanks!

Fabulous Hot Five Bean Salad

Reviewed: Apr. 12, 2006
i used white wine vinegar instead of regular vinegar. these are really good, but not spectacular. i liked them, so i can give it 4 stars, but my family didn't like them.

Crab and Noodle Cakes with Cilantro-Lime Mayonnaise

Reviewed: Apr. 3, 2006
these just didn't impress. they were too much trouble for something that tasted just "okay" and they looked unappetizing. the noodles just soaked up the oil and it was impossible to make patties without the noddle sticking out. like i said, they taste fine, but i won't make this again. and the cilantro-lime mayo? sorry!

too doughy -- probably my fault -- but a wonderful flavor.

Pumpkin Fluff Dip

Reviewed: Apr. 1, 2006
i followed others' advice and used pumpkin pie mix and half the cool whip. yummy and beyond easy. i think plain grahams would be better though.

Aunt Johnnie's Pound Cake

Reviewed: Mar. 26, 2006
wow. this is delicious -- i'm sitting here eating it up and i made it for my husband! next time, though, i think i might put a bit less almond extract, it is awfully almondy. thanks for the great recipe!

Potato Salmon Patties

Reviewed: Mar. 24, 2006
a nice variation on a recipe i've made for years with canned fish or chicken, an egg, some seasoned salt, and ritz crackers. my boys still prefer the original, but i thought this had a lot of savory flavor.

Vietnamese Fresh Spring Rolls

Reviewed: Mar. 20, 2006
yum yum, i love spring rolls. i used lightly seasoned/sauted tofu and shrimp. i'd never had fish sauce like this, and i loved it, very light and tangy. thanks!

Agedashi-esque Tofu

Reviewed: Mar. 20, 2006
this recipe as is is a good place to start. i season the cornstarch, for instance. i'd like to tell others though -- try and use at least 1" cubes. too small, and you might lose the flavor of the tofu -- unless that's what you're going for! ths recipe is versitle and great fun. thanks!

Pasta Siciliano

this just wasn't good. didn't have any "oomph". too oily, the feta didn't compliment the other flavors... wanted to like it. sorry.

Cheese Filled Triangles

we just weren't at all impressed with the flavor, and i think phyllo dough with such a liguidy filling is more truoble than it's worth. sorry.

good place to start; i added many of the things suggested by other reviewers and that worked well, but the actual recipe seems like just a good base.

Frijoles a la Charra

these have a good flavor, but not any better than my own recipe. AN IMPORTANT NOTE: you MUST soak beans overnight first. anyone trying to follow this recipe who does not do so is going to be pretty frustrated!

Crispy Rice Candy

Reviewed: Mar. 12, 2006
this is good, but mostly a good place to start. i thought it was too much chocolate (and i'm a choc-o-holic) and not enough crispies. the nice thing is, you can vary alot according to taste. next time i think i might actually break up some pretzles and put them in. i also followed the suggestion of others and poured it all into a pan; it took a while to firm, so i put that in the fridge, and then they were a pain to cut into bars! next time, if there is one, i think i will drop them by spoonful.
