Amish White Bread

i cannot rave enough! this bread was easy - and i'm qualified to say so, since i have to mix by hand. it's sweet, but has such a great "bread" taste too. it's light and fluffy and went perfect with our summer-fruit themed dinner. i might have to make this every few days!

this is delicious, and i don't think i'll ever make candied yams again. butternut squash is such a pain to deal with, but i sure do love it. i know i'll make this again for sure. thanks so much for the recipe!

Italian Confetti Pasta Salad

i wouldn't call it the best, but it is really good. i didn't think it was too much mayo myself, and i used a little more than 2 cups dry pasta, which i also thought was just right. a good recipe overall, and a good recipe to play with.

Mmm-Mmm Better Brownies

these are only okay, absolutely nothing spectacular about them. if you use butter instead of oil, be aware that you will really taste the butter. not nearly chocolately enough for chocolate brownies. plus, this recipe is the same as several other recipes, and i was looking for something more unique. i'll stick to my own.

Best Brownies

these are just "okay" brownies, nothing spectacular. mine took a lot longer to cook, and i thought the buttery taste was way too noticeable. plus -- this recipe is the same as several others on this site, minus the frosting (which i didn't use; i guess i just think frosting id for cakes).

Empanadas

MAKE DOUBLE OR TRIPLE THE BATCH. there just isn't enough for how fast they will go. i used pumpkin filling (my husband's favorite)and had the dough in the fridge for 2 days before using it and it was easy to work with once i started rolling it out. i used a lot of flour in the process, as suggested, and had no problems with sticking. i think someone mentioned a bit of salt in the dough, which i might throw in next time, but just a pinch. the only problem? i wound up with only eleven empanadas and get this: right before baking, a crew of workers who were fixing a transformer in my backyard sat down outside to watch the world cup with my husband. not enough to go around! i'll do this a lot, i'm sure - thanks!

Beer Batter Fish Fillets

almost a total diaster. the batter does not stick to the fish (and i dredged mine in some flour first for insurance) either before or during frying. the batter wasn't thick or tasty - i tried two batches, with and without dill. i like dill but ... i even spiced up the other batch but it was still nothing to shake a stick at. two stars because we ate it, but everyone loaded up on shrimp and french fries as much as they could before the fillets.

this tasted like brown sugar with some nut in there somewhere -- not bad but not great. so sticky they aren't even fun to eat. and they actually stuck to wax paper! i won't do this again.

Smoked Salmon and Egg Salad

i can only give 3 stars because in the end, i'd rather do the toasted bagel-cream cheese-capers-tomato-lox thing, and not go to all the trouble. this is still easy enough, and a neat way to use smoked salmon. i omitted the onion (can't eat 'em), used maybe a generous 1/2 cup of mayo, 7 eggs, 6 oz smoked salmon, added a tsp of lemon juice and a tbsp or two of capers. i thought this was too much dill, especially since fresh dill is so strong. don't add salt (because the salmon will add enough salt to the flavor.) if you're going to top bread with it - add a slice of tomato. trust me ;)

Addictive Sweet Potato Burritos

i scaled these down to 4 servings; i also omitted the onion since i can't eat the darn things. i was soooo interested in how these came out, since this particular recipe seems so contraversial! so let me add to some of the caution -- the flavor here really is unique, a very odd balance between the sweet potato and the mustard/soy sauce/bean mix. mostly i think that if the mustard was scaled back even more, as well as the soy sauce, the flavors might work a bit better together, as they'd be more subtle. i personally liked it, but i know there's no way my family would. i also added very little water, as suggested, and i more smooshed than mashed to give it a good chunky consistency and maintain distinctness of the flavors. if you want something unusual, you should at least try these. like i said, i liked them, but i'll never make them again -- mostly because the family wouldn't approve of the flavor, and because it's just too much work for something i'll probably never crave. still, ingenuity counts for something - so 4 stars feels right.

Delicious Black Bean Burritos

these are quick, easy, and nutritious. i did omit the cream cheese and onion, and used a lot more jalepeno and added onion powder (onions make me sick, but i still like the flavor). i also added some ground cumin. next time i think some chopped tomatoes would add to the flavor too.

Crab Rangoon I

these really are good. the addition of ginger gives it a lovely flavor, and even though i scaled the recipe back, i thought the amount of soy sauce overall was fine. i added extra water chestnuts for crunch, and fresh parsley, but left out the cilantro, and i added some garlic powder as well. as per another's suggestion, i think a bit of lime would be great. i put it all in the food processor, which worked really well. i wound up adding extra crab after i took it out though - nice to have some chunks. i made BIG wontons cause i only had 6 or 7 left -- it may seem tricky to use the wrappers, but i think the trick is in the water you use to "moisten" to seal. don't skimp on the water; wet your fingers and work with the wrapper for a few seconds and you can really twist them into whatever kind of seal you want (triangle, package, roll, etc). these were really tasty, and a great recipe to work with. thanks!

Eggplant and Pepper Parmesan Sandwiches

i have to preface by saying i used green pepper and feta; i can imagine the difference with red pepper and goat cheese. either way, this was nothing special for me. the best thing about it was probably the olive spread, which i had never used before but i'm sure i will now. if you make this, you may want to peel the eggplant before slicing and season with some olive oil and basalmic vinegar, or something to enhance the flavor of the eggplant. it also seems sort of overkill to use goat cheese (or feta for that matter) and parmasean. if you want to make a great veggie sandwich, i recommend the portabello sandwiches from this site. i wanted to love these -- sorry.

Beef Samosas

since i'm a vegetarian, i made these for my son and husband, both very picky. i didn't add peas, since the hubby hates them, and forgot i was out of cardamon so i added a bit of garam masala. the grocery store closest to us never had puff pastry or phyllo, so i used wonton wrappers, which i had on hand anyway. all things considered, they smelled so good when cooking i was very tempted to try a bite! my son wouldn't touch them, but he's 3, so i forgive him. my husband loved them -- so a huge success! thanks for the recipe, i'm sure i'll make them again!
