Grandma's Lemon Meringue Pie

This is great. Make sure to add the filling to a warm crust and add the meringue to a warm filling. Then there will be no separation. Do not bake it too long or "beads" will form on the meringue. My husband's favorite.

Honey Baked Chicken II

I am not a fan of curry but thought I would give this a try. I loved it. I only added a rounded 1/2 tsp of curry but next time I will add more. I also made a pocket between the skin and meat then filled it with the sauce by turkey baster. Turned out great. A surprise keeper.

Cousin Cosmo's Greek Chicken

Very easy for the excellent results. I used a slotted spoon to serve the spinach tomato mixture over some orzo with the chicken to the side. It is a great dish for the amount of time to prepare. I added fresh black pepper to the orzo/spinach and sprinkled with more feta.

This is great. A new summer favorite. Full of flavor for only marinating for 3 hours. I served this on rice pilaf with tzatiki. Perfect.

Feta Chicken Salad

Very good change from your usual chicken salad. I used a rotiserie chicken from costco, 1/2 red bell pepper, 1/2 english, cucumber, light mayo, light sour cream, and light feta. I served a big spoonful on a bed of greens with pita chips on the side. Yummy summer dinner. Thanks for the recipe.

Arroz Con Pollo Burritos

Nice flavor for a classic burrito. We added black beans, cheese, sour cream, and guacamole to each burrito. If you do like spice I would add a spicy salsa or taco sauce to it. My husband and I thought it was great !!!

Best Italian Sausage Soup

This was a very good recipe. After 4 hours in the crockpot, mine was not as thick as I would have liked. I ended up putting it on the stove, adding some cornstarch to thicken. It turned out great. Next time I would add dried spinach tortellini rather than fresh since the fresh is not bite size. I change to a 28 oz dice tomato and 14 1/2 oz petite dice tomato both drained. I also added about 1 tbls of tomato paste and a dash of italian seasoning. It turned out to be a great dinner on a chilly evening.

Grilled Chicken in Pita Pockets

Followed the recipe as written and was pleasantly surprised. I marinaded the chicken for 3 hours. Very versatile marinade that would be great with the chicken on a salad. This is a keeper.

PHILLY Creamy Rice, Chicken and Spinach Dinner

This is a satisfying weeknight meal. Quick to put together and a complete dish in one. I used 2-3 chicken breasts cut into bite size pieces then marinated in the dressing for a couple hours. I also used a 14.5 oz can of chicken broth and half a block of low fat cream cheese. Followed the cooking directions other than those changes. Will keep this recipe on hand.

These have good flavor but a little too much cream cheese for me. Next time I might start with 4 oz of cream cheese and add more to the mix if it needs it.

This was a good marinade. I think next time I will add more than a pinch of all the spices. Didn't think it was too sweet. It has a sweetness to it but that would be expected with 1/4 cup of honey. Will make it again.

Phenomenal Chicken and Pasta in Creamy Pesto Sauce

Great pasta recipe. I marinated 4 chicken breasts in the "marinade" for 2 hours. I followed the directions using 1/2 n 1/2 rather than heavy cream. Finished off the dish with salt and pepper. My guests and 8 year old thought it was great. Will make again
