Slow Cooker Pineapple Pork Roast

I don't know if it's fair to rate this, since I used the recs to add more items: thyme, whole cranberry jelly, crushed pinepples, a dash of cinnamon, red pepper flakes and soy sauce, sugar. Can't say I loved the outcome. it was a bit too tart for me - even with the sugar ( i didn't want to make it too sweet.) Also, I know that some don't believe it's possible to have dry pork roast from a crockpot (i didn't either), but lo and behold! DRY DRY pork roast. I had it bathing in those juices, and yet it was still dry! It was easy to pull apart but all the moisture was gone! I'd give my outcome a 2 star, but I can't rightfully give that to the recipe since I changed it so much. Just be aware!

Marinated Beet Salad

delicious and simple and fast. I ended up sauteeing the onions, as I'm not a super-fan of raw onions. I reduced the amount of sugar, as the onion added a nice sweet caramelized flavor. I served this on top of fresh spinach.

Four Cheese Macaroni

This is such a great and tasty M&C recipe - only I made it even BETTER with some bacon and apples!! I fried the bacon first, and cut it up into small pieces. Then sauteed the diced apples (1 whole braeburn apple) in the same pan to give the apples a nice bacon-fried flavor. I followed the suggestion of others and increased the amount of cheese (almost double). I did add the eggs to see how it would turn out, but I won't be doing that next time - it made it less creamy. I ended up melting the butter, the cheese, and the milk (and tempered the eggs into this mix) all together to save some time, and then poured it on top of the macaroni. I mixed in most of the bacon and apples into the M&C. After spreading it into the glass dish, I topped it all off with more cheese and the remaining bacon and apples. I baked for 15 minutes and broiled for 8 minutes until golden on top. It was PERFECTION. Leftovers were just as good, and I'm really happy with this recipe!
