About this Cook
I'm 25 with a gorgeous boyfriend who is the first to admit he is a terrible cook! I work at the local hospital as a secretary, have three lovely cats and a beautiful dog. When I first moved out of home I realised I should now learn to cook - I'd never even boiled an egg. Over 5 years later I am still learning but like to think I have come a very long way. I have my mother and grandmother to thank as they are both excellent cooks.
My favorite things to cook
All things healthy. I love grilling and slow cooking. Anything spicy or slightly unusual always appeals to me and I love trying new things all the time, tweaking the recipe to suit my tastes. My favourite cuisine of all time is mexican and my boyfriend loves it when I make tacos, fajitas or enchiladas!
My favorite family cooking traditions
Roast Dinners! What the english are slightly famous for particularly Roast Beef with all the trimmings.
My cooking triumphs
My first dinner party at the age of nineteen, Couldn't believe it after only a year of cooking and nothing went wrong! Also more recently homemade sushi! Fantastic and well worth the prep time.
My cooking tragedies
Nothing too drastic......yet! I'm sure my time will come!

Smoked Salmon Sushi Roll
I make this recipe often with a few variations: others have suggested, I add sugar to the rice mix 2.I don't use as much rice per roll as shown in the picture, it's too much 3.I sometimes substitute very fresh tuna for the salmon 4. I add thinly sliced scallions to the cuke / avocado. I love this served with a sweet soy dipping sauce containing 3T soy, 2T sake or sherry, 1T brown sugar and a sprinkling of sesame seeds! Another good dip for those who like chilli is to use 4T soy, 1T rice vinegar, dash of hot chilli oil and some red pepper flakes. LOVELY!!!! Finally, use wet hands when rolling, use a bamboo mat for best results and use a wet knife for slicing. Happy sushi making!

Don't forget to soak wooden skewers for at least 30 mins in water before to prevent burning!!
