Cheesy Eggplant Bake

I expected a fairly good, kind-of-standard eggplant dish, but this was delicious! A really nice main meal, though it would probably go pretty well with pasta. No changes at all.

Seven Layer Taco Dip

I drastically reduced the fat and calories by substituting fat-free sour cream, fat-free cream cheese, and reduced fat cheddar. Brought it to a party and NO ONE noticed the change, because all the other flavors made up for it. The dip was scarfed up, and I got requests for the recipe.

Chicken and Mushroom Saute

I've made this a couple of times, and it seems to come out better with chicken broth (instead of boullion), extra cornstarch, fresh mushrooms and no onions. Tasty and light.

Slow Cooker Stuffing

Made this for a crowd of 12. Used six cups bakery-bought white bread, six cups bakery-bought whole wheat bread, and about 2/3 - 3/4 of the suggested chicken broth. Everybody liked the end result, and it was a lot lighter and tastier than boxed stuffing. Recommended!

Fantastic Black Bean Chili

Hearty and delicious! I followed other readers' suggestions by adding two teaspoons of cumin and a dash of cayenne pepper, as well as substituting an extra 1/2 lb. of ground turkey for a can of black beans. Such a good meal.

Yummy Sweet Potato Casserole

This is very, very sweet - practically a candy bar. The sugar content overwhelms the taste of potato, making it a better dessert dish than dinner side. Will not make again.

Caribbean Pasta with Shrimp

This dish takes awhile to make, but is ultimately delicious and highly recommended. My only change: I used one heaping tablespoon of Thai Kitchen's Roasted Red Pepper Chili Paste instead of two. The spice level was perfect; it had sufficient kick but didn't burn my face off.
