Cajun Chicken Pasta

Reviewed: Feb. 24, 2009
I was a little worried about making this dish because my kids are kind of cry babies about spicey food, but my husband begged. WOW... what an amazing dish. The only things I changed was I used penne and fresh garlic. Oh I also cut the vegies and meat into bite size peices. My kids loved it. They cleared their plates and asked if we could have it again next week.

Fry Bread Tacos II

Reviewed: Mar. 3, 2009
This rating is for the frybread alone. I used my own taco stuff. My husband (who is native american and kind of an athority on frybread) says this is a very good frybread recipe and everyone in my house loved it.

Baked Pesto Chicken

Reviewed: Jan. 27, 2010
Very good. I added a little more olive oil and garlic. I poked holes in the chicken and let it marinade in the fridge for about 5 hours. I then cooked it as directed but I finished it off with pepper jack instead of mozzarella. I served it with pasta and caesar salad. My whole family loved it.

Shrimp and Crab Enchiladas

Reviewed: Jan. 27, 2010
This came out amazing! I added sea scallops, green chilies and onions which I sauteed in butter and garlic. I also used fresh cilantro instead of green onions. I put pepper jack in the enchiladas and a mixture of chedder and pepper jack on the top. I served it with rice and beans and WOW it was good.

Baked Lemon Chicken

Reviewed: May 24, 2010
I was really thinking 4 1/2 stars. I also used panko instead of bread crumbs and marinated the chiken in lemon juice and garlic for a couple of hours. I really think it needed a sauce of some sort, maybe a burre blanc. Very tasty though!

Greek Penne and Chicken

Reviewed: Nov. 30, 2010
This was so good! I took a few readers suggestions and added chicken broth and a little heavy cream. I used canned diced tomatoes instead of fresh. I added half the feta to the mix and sprinkled half on top of the completed dish. I also used marinated artichoke hearts and added some of the marinade to the sauce as well. My family loved this dish and asked that it be added to the regular rotation.

Calzone

Reviewed: Jan. 2, 2011
This was a great dough recipe. The only thing I did different was I added some garlic powder and itallian seasoning to the dough. We made personal size calzones so everyone could fill it with their favorites. Thanks for the recipe!

French Bread

This bread was very good! My family ate both loaves with spaghetti. I cooked the loves on parchment paper instead of the cornmeal and it came out perfect. I also put a couple of ice cubes in the bottom of the oven.

Sourdough Bread III

Reviewed: Jan. 17, 2011
This was a very good recipe. My starter was fairly young and I was a little nervous. My in-laws were coming for dinner and I wanted to impress them. My father in-law loved the rolls I made from this. He is a sourdough junkie and said these were the best! Thanks!

WOW were these good! I took someones suggestions by turning the pan upside down while cooling to let the rolls absorb the filling in the bottom of the pan. My family is already begging me to make these again!

This was interesting. I used panko bread crumbs and added horseradish dijon mustard to the honey. I think the mustard made the dish. It off-set the sweet. My kids loved it!

I made this for my daughters baby shower and it was a huge hit! This is a great basic recipe because you can add pretty much whatever you like and it will still be amazing. You can sub mayo for sour cream, add bacon or peppers....oh the possibilities are endless.....
