Bacon Wrapped Hamburgers

While these had really good flavor they came out really thick and hard to eat. The burger tends to be the width of the bacon you use and that's just a little too thick for my taste.

My husband begged me to find this recipe. My kids and husband loved it! I have never been a fan of this dish so I'm taking my opinion out of the equation and giving it the 5 stars that they insist it deserves.

Calzone

This was a great dough recipe. The only thing I did different was I added some garlic powder and itallian seasoning to the dough. We made personal size calzones so everyone could fill it with their favorites. Thanks for the recipe!

Greek Penne and Chicken

This was so good! I took a few readers suggestions and added chicken broth and a little heavy cream. I used canned diced tomatoes instead of fresh. I added half the feta to the mix and sprinkled half on top of the completed dish. I also used marinated artichoke hearts and added some of the marinade to the sauce as well. My family loved this dish and asked that it be added to the regular rotation.

Baked Lemon Chicken

I was really thinking 4 1/2 stars. I also used panko instead of bread crumbs and marinated the chiken in lemon juice and garlic for a couple of hours. I really think it needed a sauce of some sort, maybe a burre blanc. Very tasty though!

Breakfast Link Bake

I usually love breakfast for dinner but I wasn't overly fond of this. Following this recipe exactly I though the hash brown part still came out mushy and the sausage was undercooked. I may try this again with a few modifications but I'm not sure. I'd rather make a quiche.

Shrimp and Crab Enchiladas

This came out amazing! I added sea scallops, green chilies and onions which I sauteed in butter and garlic. I also used fresh cilantro instead of green onions. I put pepper jack in the enchiladas and a mixture of chedder and pepper jack on the top. I served it with rice and beans and WOW it was good.

Baked Pesto Chicken

Very good. I added a little more olive oil and garlic. I poked holes in the chicken and let it marinade in the fridge for about 5 hours. I then cooked it as directed but I finished it off with pepper jack instead of mozzarella. I served it with pasta and caesar salad. My whole family loved it.

Grilled Chicken and Portobello Lasagna Rollups

Ok..I didn't much care for the mixture of the red and white sauces, but my kids loved it and my daughters friend said that it was the best "whatever that was" she ever had. Her dad asked for the recipe so to be fair even though I didn't like it i gave it 4 stars.

Crock Pot Portobello Chicken

I wasn't real fond of this. Maybe it was the dressing. I used wishbone light itallian and it all came out tasting very vinegary. I may try it again but definately pick your dressing wisely. Perhaps a cheesy itallian with less vinegar in it.

Fry Bread Tacos II

This rating is for the frybread alone. I used my own taco stuff. My husband (who is native american and kind of an athority on frybread) says this is a very good frybread recipe and everyone in my house loved it.

Cajun Chicken Pasta

I was a little worried about making this dish because my kids are kind of cry babies about spicey food, but my husband begged. WOW... what an amazing dish. The only things I changed was I used penne and fresh garlic. Oh I also cut the vegies and meat into bite size peices. My kids loved it. They cleared their plates and asked if we could have it again next week.

Best Spanish Rice

My husband loved this rice. I want it to be a little fluffier. My husband said to make it fluffier to soak the rice in water for about 45 min prior to cooking. I would also recomend about 1/4 cup of water or broth extra. The flavor is wonderful however and I will definately make this again.

This is very good! I did add a little cinnamon and nutmeg. I also add more marshmallows 5 min before I remove it from the oven because the other ones melt away to nothing.

Sausage Mushroom Quiche

My family loved this. I used spinach instead of parsly. I also added garlic and onions to the sausage and mushrooms. I used a 5 cheese itallian blend instead of the parm. I found it easier if you layer the egg, cheese, and sausage/mushroom mixture and it came out wonderful.
