Pumpkin Dip

I love this dip! Very creamy, not overly sweet & improved with age. Tasted like my favorite pumpkin pie filling. Made as the original, but did cut back on the sugar by approx 1/4c (I had originally added 1 1/2c. instead of 2 & it just wasn't quite sweet enough so added another 1/4 c.) Served with apples & gingersnaps. Made for a Halloween buffet ~ on the menu again for Thankgiving appetizers. Highly recommend.

Black Halloween Punch

Kids loved it for Halloween! Served with "spooky" ice balls w/gummy worms frozen inside. Agree w/previous reviewer that has more impact if served in punchbowl that is NOT clear. The punch has more of a purplish color to it than a true black. Already on my list for next Halloween celebration.

Quick Chicken Divan

One of our favorite comfort foods! I liked this recipe better than my grandma's that I've been making for years. I use broccoli florets, add a bit of extra chicken (makes a HUGE difference if it's good, flavorful chicken), and full-fat soups/mayo ... makes a big difference how yummy (versus bland) the casserole will be. Oh, I also put another extra 1/2 - 1c cheese on top (husband's preference). The lemon juice is a must ~ can't skip that step!

Blue Cheese Dip II

So good! Made this for a Thanksgiving appetizer buffet two years in a row & have been ordered to make it again next year! Definitely use high quality bleu cheese ~ makes a dramatic difference in flavour. I used reduced fat sour cream but full fat mayo ~ had a wonderful creamy texture. Also, I highly recommend making it at least a day in advance to allow the flavours to meld. We liked this best w/veggies (cherry tomatoes, red bell pepper, and celery in particular).

Iced Mocha Fusion Shake

Good but not great ... I had high hopes after reading the reviews but end result didn't live up to the hype :-(. Followed recipe exactly as written ~ had nice coffee-shop flavor but texture was icy, rather than smooth or shake/smoothie-like. I only drank about half. I made it again tonight to experiment ~ tried eggnog, cocoa, rum extract, ice, sugar & a bit of nutmeg ~ again, very good taste but the texture was too icy for me. Off to find another coffee drink to try ...

Chewy Chocolate Chip Oatmeal Cookies

Yum! Cookies came out chewy with a nice brown sugar flavor. Dough was SO good (tasted better than the baked end result!). I kept recipe the same, except decreased salt (to 1/2 tsp, based on previous reviews), used 1 1/2 c chocolate chunks instead of 1 cup chips, and used only 1/2 chopped walnuts. Did seem like it was missing something (maybe some cinnamon or another spice?). My cookie sheets were looking a bit tired after all the holiday baking so lined with foil & used cooking spray ~ came out great with the 12 min cooking time (and the 5 min rest period). Will make again but tinker a bit with spices to hopefully make a 5 star cookie next time.

Chicken and Corn Chili

Oh, this is soooo good ~ incredibly warm, filling & satisfying. All of us loved it! I did make a handful of changes ... only used 3 chix breasts, doubled the cumin & used 1 can black beans & 1 can kidney beans (instead of 2 cans pinto). After reading other reviews, I was afraid it would be too dense (I really wanted something more soup-like), so I added a can of chix broth. I wish I had some tomatoes to throw in ~ would have been a great addition. After cooking, we spiced ours up with some hot sauce & red pepper flakes ~ need a bit more oomph for our family's tastes. Garnished with shredded cheddar & served corn muffins on the side. Perfect cold-weather dish ... highly recommend this recipe.

Roast Chicken with Rosemary

A keeper! So good ~ whole family loved it. Following suggestions of others, I added lemon slices & garlic to the cavity & put slivers of butter & garlic under the skin. Easy to make & very satisfying.

Cha Cha's White Chicken Chili

Spicy! Husband loved it ~ it was a bit too hot for me. I made three changes ~ decreased the garlic, pureed one can of beans before adding (added some creamy texture to the soup), and increased the cheese (husband's preference). Quick to put together & reheats wonderfully. Will make again but will tone down the heat.

Easy Vodka Sauce

Very easy ... good basic sauce. Had more of a generic spaghetti sauce flavor/texture to it rather than a true vodka sauce but pretty good nonetheless. I had to use light cream rather than heavy, which probably accounts for some of the taste difference. Makes a TON! I altered it slightly by adding garlic, using olive oil instead of butter to saute the onions, adding 6oz proscuitto (needed much more ~ disappeared in the sauce), and adding oregano (couldn't get my hands on any fresh basil). I served it over rigatoni. I wish I would have used canned roma tomatoes & chopped them, instead of the crushed tomatoes.

Easy Sausage Strata

Wonderful morning comfort food! Made two versions for Christmas morning ... sausage & chedder and ham & swiss. The ham/swiss was the overwhelming favorite! The sausage & cheddar was good but tasted a lot like pizza. Only modification I made to the recipe was using slightly more bread (husband's preference). Making it again tomorrow, this time with bacon & a mix of cheddar & jack cheeses since that's what I have on hand. Easy way to use up day-old bread.

Hot Corn Dip

Good but not outstanding ~ made for Christmas day appetizer & served with tortilla chips. Tasted like a creamy chunky salsa & didn't have great eye-appeal. Recipe as written ended up having a rather mild flavor ... I added cumin (yummy), a bit more chili powder, and some red pepper flakes. VERY easy to prepare ~ will make again but play around with the spices a bit more & probably add more cheese to make it more dip-like, rather than salsa-like.

Warm Crab Parmesan Dip

Very good ~ made it for Christmas day appetizer. Did make several changes based on other reviews ... decreased mayo to 1/2 c, used mixed cheese (parm & asiago), decreased garlic to 2 cloves, added red pepper flakes for a bit of a zing, and used a bit more crab (10oz premium can). Leftovers tasted even better the next day (both cold & warmed). Kept it simple & served with tortilla chips ~ nice mix of salty & creamy. Definitely will make again.

Slow Cooker Creamy Potato Soup

Pretty blah ~ was missing something. I increased the amount of bacon (fried it separately from the onions) & used 2 cans of non-condensed chix broth plus 1c water. I also used my immersion blender to puree some of the soup mixture to add some more substance. Ended up doctoring it a lot ~ added red pepper flakes & a splash of hot sauce hoping for some sort of flavor. Also threw in some sherry at the last minute, which was a surprisingly good choice ~ added some depth to the overall flavor (or lack thereof). Garnished with shredded jack cheese, green onions & bacon. Ended up being OK for a casual dinner but won't make it again.

Eggnog Quick Bread

Following previous reviews, I made these changes: increased sugar (to 1 1/3 c) & nutmeg (to 1/2 tsp), dropped flour to 2c, added 2 Tblsp veggie oil plus a splash of vanilla. Used 3 tsp real rum, rather than extract. Made 3 3x5 pans ~ had perfect eggnog flavor (which improved over a few days) but was a bit dry. My picky kindergartener couldn't get enough of it, however! I would make this again but tinker around a bit more with the ingredients.

Chocolate Rum Balls I

So rummy & yummy! Followed the recipe exactly ... tasted great right off the bat & improved over time in the frig. Huge hit at my husband's work party, even though that batch was only about 16 hours old. I liked them best aged 3 days. Definitely a keeper!

Margarita Balls I

Just OK ... followed the recipe exactly ~ the balls ended up crumbly & a bit dry. I thought they would improve over time (like rum balls do) but they just ended up getting drier. I think these would be improved with more tequila & orange flavor ~ they didn't have any "oomph". Disappointing.

Cracker Candy

Fabulous! I wisked the butter & sugar constantly ~ surprised at how thick & yummy it got so quickly. I lined my cookie sheet with foil sprayed with non-stick spray .. had no trouble getting the candy to lift out. Definitely use saltines ~ my sister made this recipe with graham crackers & it just wasn't the same.
