Penne and Vodka Sauce

I loved this recipe. Like others, I added a large shallot, red pepper flakes, and used bacon instead of pancetta, as I couldn't find it in the store. A little fresh basil at the end makes it extry yummy :)

Peanut Butter Bars I

Overnight Coffee Cake

Love this recipe! Moist, easy to make and very tasty! I used Ducky's topping recipe too, it's spectacular! Thanks for a great recipe that doesn't use a boxed cake mix!

Ronaldo's Beef Carnitas

I just replaced my pork carnitas recipe with this one. I used jalepenos instead of the chile peppers, added 1 Tbsp of paprika, and used a crock pot on low. It turned out pretty spicy but that's how my family likes it. Great recipe - I'll be using this recipe from now on!

Clone of a Cinnabon

This was my first time making cinnamon rolls from sratch...and it will be the only recipe I try. Why mess with perfection? I used the bread machine and refrigerated the prepared rolls overnight, then let them rise and bake the next morning. Thanks for the amazing recipe, this will be used for special guests for a special treat :)

Smothered Filet Mignon

I had leftover filet that was cut into cubes (leftover from fondue night) and thought this would be a great way to use it up. The cubes soaked in the marinade very quickly. The carmelized onions are a must!!! I didn't have fresh blue cheese, so I tried blue cheese dressing. Still very delicious. I am still amazed at how all the flavors worked perfectly together. I served this up with a standard baked potato for a gourmet weeknight meal - and it was loved by everyone. Thanks for the wonderful recipe!

Zucchini Bread IV

So, of course I did some changes but not all of the "suggested" ones. I used 1/2 the oil and added applesauce, and I added another cup zucchini. I think they turned out terrific, just like I remember from when my mom made it for me as a kid. Thanks for the great recipe!

Best Ever Popcorn Balls

These are awesome! I put a chocolate kiss in the middle of each ball, then put them in a small bag and tied with ribbon. I gave one to each kid at the party and told them there was a surprise inside. Of course I had to eat one and I must say it was the best popcorn ball I've had since I was a kid :) I'll change the colors and hidden candy inside many times over for a variety of holidays to come.

Summertime Tuna Pasta Salad

A great way to use fresh vegetables. I like how the tuna, pasta, and vegetables add lots of dimension to the salad. This would be a great dish to take to a potluck, it will appeal to lots of different tastes.

Mexican Pork Chops

Great idea! Like everyone else, I used what I had on-hand - frozen corn, black beans, canned tomatos, and Minute Rice (by the way, this reduced the cooking time immensely!) Added cumin and chili powder and added a can of chicken broth for more liquid. Served it with cheese quesadillas - a fast and very easy weekday meal. I ended up with too much tomato/bean/rice/corn mixture, so I froze some for the next time - which will make it even that much faster! Thanks for a great idea!

Ham and Cheese Bowties

I made this almost exactly as written. I had a 12 oz box of bowtie pasta so I used it all. And I threw in cheddar, mozzarella and colby cheese - tried to use the same amount as the recipe called for but split it into the 3 types of cheese. Also, thought it needed a veggie so put in some sweet peas. My husband and I loved it - the kids didn't like it too much, it had a bit of a gourmet flavor which is good! Tip: I used a 12 inch deep skillet to make the recipe in, it accommodated the pasta and I just threw it in the oven since the skillet was oven safe. So there really wasn't a lot of dishes to clean up. This is a great, homemade tasting meal for a winter night that you can customize to your family's liking.

Mocha Cream

Great starter recipe for icing...I added some cocoa powder and a little more sugar, iced a cake, then added some chocolate covered espresso beans on the top of the cake! Very grown up way to serve cake! I also had a little left over, so I am thinking of ways to use it up in other desserts...it's very versatile!

Lemon Cake with Lemon Filling and Lemon Butter Frosting

I made a simplified version of this cake. To save time, I used a white box mix. In between the 2 cakes, I used raspberry preserves. Then I sliced each cake in half and used store bought lemon curd. Cutting into the cake is beautiful - layer of yellow curd, layer of red, and another layer of yellow. I made the frosting as written. I served this cake tonight at my book club and all the ladies couldn't believe it was homemade...they were very impressed. Thanks for a great idea for what became a unique dessert!

Beer Cheese Soup III

I'll keep looking for a recipe that better suits my tastes. This was OK but nothing that makes me want to make it again. Knowing the kind of beer to use might help, all I had was an imported english ale, which gave it a bitter taste.
