Gandule Rice
I altered this recipe by making it without the pork...and it turned out fantastic! To save time, I used 1 tsp of annatto powder. I cut recipe by half and used only 2 cups of Jasmine rice (adjust water accordingly). There was enough to serve 8 people...with leftovers.

Ahi Poke Basic
I made this recipe as an appetizer for gourmet night (hawaiian theme) and it received rave reviews. I altered recipe based on reviews I read: I reduced soy sauce to 1/3 cup low sodium version based on using 1.5 lbs of yellowfin tuna (Cost Saving Tip: buy the tuna nuggets and price goes from $18/lb to $5/lb...same thing except leftovers not used for fillets/steaks). I used tabasco sauce instead of red pepper flakes & 1/3 cup chopped sweet onion with 1/3 cup green onions. I also added a tsp. of fresh grated ginger and the juice from 1 lemon. I, too, omitted the nuts and served on romaine lettuce leaves. Thank you for a great recipe.

Scott Hibb's Amazing Whisky Grilled Baby Back Ribs
Finger-linkin' delicious. I cut back on the red chile peppers since I'm a wimp and it was still pretty spicy. I substituted real onions and garlic instead of the powder and used kosher salt instead of table salt. I also doubled the recipe but next time I will use less water so it doesn't take so long to reduce. Instead of grilling, I added sauce to ribs after 2 hours and backed in oven for another half hour. My husband said this recipe beat all others hands down...and he's the chef in the family
