Kalua Pig in a Slow Cooker
Great flavor. It was a little salty but that may have been my fault. I only used a 3lb pork roast but did't reduce the salt and liquid smoke. I only cooked it for 7 hours on low in my slow cooker and it came out very tender and juicey. Well worth the cost of buying the specialty salt .

Apple Enchilada Dessert
I made this using blueberry pie filling and the cream cheese mixture as suggested in some of the reviews. This was an awesome recipe. My husband raved about it. Took this to a family breakfast and everyone wanted the recipe. It was quick and easy to prepare. I did let it bake longer to make it crisper, about 10 to 15 min longer.
