Unsweetened Surprise

I had to find a recipe that didn't use chocolate syrup since I didn't have any on hand, so I made these. This is the recipe I'm going to use from now on. Because they don't have the syrup they keep better and don't get so gooey. They are rich, chocolately and minty - perfect. I have served them to several people and they're always a hit!

Caramelized French Toast

Really good. Next time I will use only 1/2 c brown sugar because I had a lot of extra sauce. I dipped only one side of each piece and that was sweet enough for us.

Chocolate Truffle Cookies

Wow. Chewy, very chocolatey goodness! I saw a review that recommended keeping your hands wet (with cold water) to minimize the mess while forming the balls and found that to be helpful. I baked them for 9 minutes, until puffed and they are perfect.

Crazy Cake

This cake is amazing. I followed the recipe exactly as written and the cake turned out perfectly. It was moist and very chocolate-y but not too rich. I topped it off with a drizzle of powdered sugar icing with a subtle orange flavour. (Better Homes & Gardens recipe. Make sure you keep tasting it or you could end up with a very orange-flavoured icing!) I served the cake at a birthday party and it was a hit. I'll definitely make it again! Thanks for sharing!

Roasted-Vegetable Stock

I only had a red pepper on hand so used that, and didn't have a tomato. The flavor of the stock was fine, but so much evaporated during the simmering time I had less than 4 cups when I was done - and I only let it simmer for an hour. Is it normal to lose that much during the cooking process? I was hoping for a bigger batch.

Lemon Cream Pasta with Chicken

My husband gave this 5 stars, and my picky 3-year old loved the pasta. I found it to be a bit too salty, but I think that was because of the chicken broth I used. This dish is easy to prepare and I'll be making it more regularly.

Banana Bread

My daughter is allergic to milk, so I thought I'd try this recipe. It turned out perfectly. She's eating it up now. The only minor change I made was to add about 1 tsp vanilla. Next time I will substitute some of the flour with wheat germ.

Outrageous Chocolate Chip Cookies

Just made these this afternoon with my 3-year old and they are AMAZING. I followed the recipe as is and baked them for 10 minutes. I have so much trouble with my cookies spreading really thin and these did not!

Basil Chicken over Angel Hair

I left out the hot sauce, which was probably a mistake because it was more aromatic than it was flavorful. I would try this again but add more garlic and maybe marinate the tomatoes in balsamic vinegar for a short time.

Curried Butternut Squash and Pear Soup

Made this soup last night and my husband and I thought it was great. It's probably our new favourite. Very easy prep! I ended up using an apple and a pear, and 1/4c lowfat milk & 1/4c whole milk instead of half and half.

Buster Bar Ice Cream Dessert

Great recipe. I served the peanuts on the side since we were serving it to young children. I liked it that way because then I could top mine with fresh fruit, which I wouldn't have enjoyed as much if it had had the peanuts in it. Will make this again and will be fun to experiment with different ice cream flavors, etc.

Baked Dijon Salmon

This is a great, easy way to prepare salmon. I didn't have bread crumbs or pecans on hand so I topped it with wheat germ and parsley. I will try it with wheat germ and pecans next time.
