Shrimp Scampi with Pasta
I made this dish tonight; it turned out awesome. I had some mushrooms I was looking to use and sauteed them with the shallots and garlic. One step that should be added is to reserve one cup of the pasta water, which should be added just prior to adding the pasta and shrimp. This adds starch and helps give the sauce a smooth texture.

Quick and Easy Chicken Noodle Soup
EXCELLENT! Here are a couple of my recommendations: 1) Double the Onion and Celery 2) I use 20oz of Chicken Breast 3) Cook the chicken for 20 minutes IN the broth/veggie mix, don't worry about pre-cooking it. Once it's cooked, take it out and chopped into bite size pieces. 4) Add the cooked chicken and noodles into the pot and cook for 10 minutes or until noodles are done. Saves time and tastes great! Low Sodium Chicken Broth worked great for me...I'd rather slowly add salt and have control over how much goes in. Enjoy! I know I did...

Guacamole
Ok, so I had to come back and review this recipe. I've been making this Guacamole for the past couple years and wow, it's a winner. I follow the directions exactly. It gets rave reviews from all that partake of it. Thanks for sharing!
