Old Fashioned Coconut Cream Pie

As written I gave it a 4. My modifications made it a 5 for me. 3 egg yolks, I also used 1 1/2 cups of coconut milk in place of 1 1/2 cups of the 1/2 and 1/2. (please note you still use 1 1/2 cups of half and half). I used flour unlike most reviewers here. Cornstarch will give it a funky look that is not typical of a coconut cream pie (this has been my experience from other cream pies). But I am sure that is just my southern bias.

Easy OREO Truffles

Made this as written. Everyone raved. For christmas I am going to use the mint Oreos instead and drizzle some white chocolate (tinted green and red) on top. Just a helpfull hint. Melt the chocolate in the microwave per the instructions on the baker's chocolate box. It made my life much easier.

Won Ton Wrapper Appetizers

I made this for a party I gave. I followed the recipe pretty much verbatim just changed some techniques. I used italian sausage, and fresh ranch dressing used a little less per another recomendation (about 3/4 cup). Cooked the sausage first (since I had them one time before at another party and the bottoms were greasy). Everyone at my party raved and wanted the recipe. Next time I will play with the cheeses a bit and see what other combos tastes good.

Swiss Chicken Casserole II

Made this for a quick ad hoc dinner party. Looked easy and quick and it was! Everyone liked it and there was not a single bit of it left. Only one minor compaint is that it was on the border of being too salty. So next time I am going to try to used the reduced sodium cream of chicken soup, or make my own dressing. Not really sure what the culprit was. Chicken was moist and flavorful.

Easy Mexican Casserole

It was good. I modified it some. I used plain red beans instead of the chili beans, and I added taco seasoning. I also omitted the tomatos on top. Used chunky salsa (which was a mistake since I had to add tomato sauce and water to the mixture. The kids and the hubby loved it. I think it was a tad too salty, so next time I will use the low sodium taco seasoning.

Aimee's Quick Chicken

Way too salty, and this is coming from someone who loves salty things to snack on! Also the grated parmesean just seemed have a funky texture to me. I think it would have been better with the shredded or about a 3rd of what was asked for. I suppose a bit of time under a broiler to firm it up a bit may help as well. I think it has potential just needs work.

Hillary Clinton's Chocolate Chip Cookies

I used to bake all the cookies as a local bakery and found this to be a great recipe. I substituted butter for the shortening and baked them on a baking stone. I also throw in a handfull of chopped pecans. The Ghirardelli semi sweet chips have been the best to use so far. They also seem to have to bake about 12 minutes in my oven before they are "right" for me, the first batch about 2 minutes longer. I thought my oven was off temp wise but the oven thermometer I put in agreed with the oven on the temp. I have made them over 30 times for various parties and that is all everyone wants me to bring. For those who said they turned out thin, I am scratching my head in wonder since mine always turn out fairly thick. Maybe the baking stone is the difference there, or even the butter, or pecans. I would also chunk your baking soda and get a fresh box just in case. If none of that works, It could be how you are mixing them. Usally people over mix cookie doughs. One other possibility is the type of oatmeal you are using. I use the quick oats. The old fashioned require longer to absorb the moisture to cook which could cause some thinning to occur.

Ricotta Cake

This is similar to an old recipe my grandmother used to make. Try using Lemon Cake mix instead of yellow.
