Yummy Sweet Potato Casserole

Delicious! Yes, it's sweet and that's really not unusual for SWEET potato casseroles. ;-) I wish I would've doubled the topping - next time! Very good!!

Slow Cooker Turkey Breast

This turned out VERY dry. :*( Per reviews, I added a little chicken broth and butter, as well as veggies in the crockpot. I can't imagine how dry it would've been if I hadn't done that! It fell off the bone but wasn't very good and the flavor was bland. Won't be making this one again, as much as I wanted it to work.

Pumpkin Fluff Dip

VERY good! I didn't use a full container of cool whip (maybe 3/4 of a container) and used 1.5 teaspoons pumpkin pie spice to give it a kick. Used a small box instant vanilla pudding mix (sugar free/fat free) because there is no 5 oz box that I can think of (even the huge one is only 1.5 oz so this must be a typo). Used fat free Cool Whip and it's not bad for you at ALL! YUM! Very good with granny smith apples. :) Super easy; will make this over and over now!

Broccoli Cheese Soup

This was good but needed tweaking. First, I added carrots and celery, which really made the soup delicious. Just brocc and cheese is often not used at restaurants (Panera uses carrots and celery), so I'm glad I added that. In the future I'll use a pound of regular cheese and not Velvetta or "cheese food" because that made it taste pretty artificial, in my opinion. Good otherwise! Kind of thin, so maybe add more cornstarch or start by adding flour to the butter for a base.

World's Best Lasagna

Chocolate Chip Pancakes

Very good! The only problem is the chocolate chips didn't really melt during the cooking process, but I nuked the pancakes for a bit before eating them and that worked. I used 1/8 cup applesauce and 1/8 cup veg oil to cut calories/fat and I didn't even notice it! Next time I'll try all applesauce. Didn't make the syrup so my review is only for the pancakes. The batch was huge so I was able to freeze some - delish! Thank you!

Extra Easy Hummus

Lesson learned: Listen to the WRITER and not the reviewers. 2 cloves of garlic is way too much for this - should have listened to the writer. Good, easy hummus. Takes seriously 5 minutes to make. Yum!

Chocolate Chip Cookie Ice Cream Cake

Very good! I'd recommend a cookie layer between the two kids of ice cream with a layer of hot fudge because we like that cookie crunch in our house. I didn't bother with scoops on top, I just smoothed it out. VERY good. Didn't last long! :)

Slow Cooker Fruit, Nuts, and Spice Oatmeal

This was very good, but I made some changes. 2 cups milk and 2 cups water to make it creamier. I used all almonds (1 cup) because I didn't have pecans. I doubled the spices and added a tablespoon of Splenda brown sugar blend. I cooked it on "warm" and sprayed the crockpot with Pam before adding anything. I used raisins instead of cranberries. It was nice to wake up to breakfast already made, but it was a little bland, even with doubling the spices. I added more butter and brown sugar, as another reviewer suggested, and it was perfect. Delicious and healthy, even with the additions!

Easy Chicken Fajita Soup

Very good! To make it easier I bought the precooked, precut chicken strips. My husband still didn't think it was very spicy with the poblano pepper, but I disagreed! Next time I may throw in a jalepeno pepper, too, for him. I added a can of diced tomatoes and omitted the green pepper (but used the red pepper). I also added 1.5 cups of water in addition to the broth because I like more liquid in my soup. Very good! Thank you!

Black Bean Vegetable Soup

Very good! Only things I changed are that I cooked the veggies in 2 tablespoons of EVOO instead of veg. oil and I only used 2 cups of chicken stock (more flavor than veg. stock and it didn't hurt the soup). 4 cups would have been far too watery, like reviewers said. Lots of protein, very healthy, and very good! Will make it again!

Butterscotch Gingerbread Cookies

Very good cookies! Came out crunchy on the outside and soft on the inside - perfect texture! I didn't use as many butterscotch chips, as reviewers said, and I added extra spices. Next time I will stick to the recipe with the spices because they came out almost too spicey. Good cookies!

Exquisite Pizza Sauce

I enjoyed this - it's healthy overall and easy. I didn't use anchovy paste and liked that it was optional. I added a bunch of spices and a little more black pepper than it called for. Very good! We won't use the premade stuff again!

Chicken Alfredo Pizza

Simply amazing. This is the BEST pizza I have EVER had. The only changes I made are that I added finely cut spinach and tomatoes to the cooked alfredo sauce. People who wanted to "thin" the alfredo...guess what...this is your CHEESE topping. You don't thin that. Do not top this with mozz. cheese. You are ruining it by doing that and changing it from a perfect specialty pizza to a regular pizza. No - mozz - needed. The author made this recipe absolutely perfect, don't change it. If you wanna add veggies, I'd recommend doing that at the end and just throwing them in the alfredo sauce before you spread it on the pizza. Only other small thing I changed is I baked the pizza crust on a pizza stone for 5 minutes before topping it and I added more rosemary to the crust than called for (about twice as much). SO good! Thank you for posting this recipe!

Pumpkin Chip Cupcakes

Very good! I used all applesauce and no oil, no walnuts, and 1.5 tsp pumpkin pie spice instead of the mixture of spices listed. I also added 2 teaspoons of Splenda/Sugar blend to the wet batter because I didn't feel it was sweet enough with just the honey (and unsweetened applesauce). Maybe if the applesauce you use has sugar in it, it would be fine. I used a half cup of egg whites (Egg Beater brand) instead of eggs. I used 1 1/4 cup pumpkin as well. For the frosting I took the easy way out and used it out of the can, but I'll try the author's topping next time. Delicious and not too bad for you (for a cupcake).

Chicken Pot Pie IX

This was so fantastic and filling! I'm stuffed from one piece but I want more it was so good! I did not double the filling, in spite of reviewers. The only things I changed are that I added a clove of garlic to the onion and added a can of potatoes and a can of carrots (instead of fresh) and I didn't have celery so I didn't use it. I used a bag of mixed veggies instead of just peas. I boiled the chicken mixture in fat free chicken broth like other reviewers did and I think it helped the flavor. I baked the bottom crust for 5 minutes (brushed with egg whites) before I cooked it. I used whole milk because I figured it would make the sauce thicker and more rich, but I may try a "light" version another time. I used a half an onion instead of a third for flavor. I used garlic salt, lots of pepper and celery seed. This was SO good I will most DEFINITELY be making it again - thank you!!!!

Gourmet Sweet Potato Classic

Very good! One thing - the recipe instructions don't specify which part of the dish requires melted butter. An experienced cook probably would have realized the softened butter goes in the batch, not the topping, but I didn't realize that so I had to add some extra brown sugar to the top so my topping wasn't right. I think the sugar from the author is right, even though some reviewers think you can use less. I did use a Splenda sugar blend instead of sugar, brown sugar Spelnda blend instead of brown sugar, and egg whites instead of eggs. I also used a big can of yams (I halved the recipe) instead of fresh sweet potatoes. Much easier and just as good. Very good recipe overall - maybe next time I won't mess up the topping. :)
