Zuppa Toscana

Excellent recipe that works well with your personal adjustments. I used sweet Italian sausage and added no bacon because of fat and calories and also used fat free half and half instead of creme. It was WONDERFUL!! Soup is my favorite thing to make and I can't believe I just discovered this one.

Super-Delicious Zuppa Toscana

Absolutely fabulous! Double the recipe or you will be sorry. I used one package of sweet Italian sausage and one package of hot Italian and added a bit of fennel seed. I also used kale just because it's so dang nutritious.

Best Ever Banana Bread

I just made this version of banana bread since I had buttermilk to use up and it turned out delicious. I doubled the recipe and it made 4 mini loaves and 1 regular loaf. I only used 2 cups of sugar and it was perfect. 3 cups would have made it way too sweet. Make sure you use really ripe bananas because they have a much higher sugar content. I've never added vanilla to banana bread and think it might throw off the strong banana flavor.

Love love loved this soup. I actully used a combo of short rib and sirloin steak. I didnt have enough serrano peppers so I added a can of green chiles. This was a nice change from the usual soups I whip up and will be making this one often.

Eezy peezy....loved this recipe. Had dinner on the table with homemade cornbread in under 40 minutes. I used one can pintos, one can red kidneys, you can customize this easily and it always turns out great!

China Lake Barbequed Steak

Used this marinade for flat iron steak and it was delicious. I added a bit of brown suger and some ginger. This is simple and makes a very flavorful tender piece of meat.

Sweet and Spicy Slow Cooker Beans and Ribs

Yum. The more we ate this the more we loved it. I made it exactly as written and it turned out great but next time may add jalapeno or something spicy to offset the sweetness. My boys topped theirs with cheese.

Todd's Famous Blueberry Pancakes

I make pancakes every Sunday for my teenage sons and we all agreed this wasn't the greatest. The flavor was a bit bland. My favorite on this site is Old Fashioned Pancakes, we simply add blueberries if we want them. It needs more fat and a litte more sugar.

Alaska Salmon Bake with Pecan Crunch Coating

Wow, this was great. I used walnuts the first time because that was all I had and it was amazing. Made it again using pecans and it was great too, but I have to say I prefer walnuts. Used fresh Copper River salmon which is one of the best flavored in my opinion, but this would work well with any salmon or fish.

Strawberry Vanilla Pancakes

Wow these were great and a good change from blueberry pancakes. I only added 1 tablespoon of vanilla as other reviewers suggested and am glad I did. One word of warning, the recipe said it served 4 but I was only able to get 5 six inch pancakes which in my family barely fed 3 people. I would double it for 4 people.

Slow Cooker Chicken and Dumplings

This was an easy and very tasty way to make chicken n dumplings. I had 5 boneless breasts so I added 2 cr. of chicken and 1 cr. of celery, 32 oz of chicken broth and threw in a little sage, white pepper and 3 bay leaves. I took others advice and flattened the "grands" biscuits prior to adding them and cut them in 4ths. Cooked on low for 9 hours and then about 45 minutes on high after adding the dough. It was perfect even though I forgot the onions!

Double Tomato Bruschetta

Great recipe! I fed 4 teenage boys and still had a tons of leftovers. I will make 2 dishes next time and freeze one. Make sure you use a good quality spagetti sauce.

Banana Crumb Muffins

To Die For Blueberry Muffins

These muffins were excellent! My teenage sons are begging me to make them again this weekend. I even made them with frozen blueberries. I made giant muffins and the recipe only made 5 so next time I will double the recipe.
