Great-Grandmother Steinbeck's Johnnycake (Cornbread)

This is excellent. My only concern is that 4 teaspoons of baking powder is a lot of sodium in addition to the baking soda and salt. I used 3 teaspoons and it cam out perfect. Next time I will try 2 and 1/2. I also used yellow cornmeal because I like the color. I like my cornbread with a rich corn flavor so I might play around with adding some pureed corn next time. As written, this recipe only took about 20 minutes to bake.

Zucchini Brownies

Ok, at first try I didn't like these. I think they need to set for 2-3 hours before you serve them. They definitely developed a better texture over time. Also, without the frosting they weren't sweet enough and they didn't look very pretty. The frosting definitely complements the recipe so if you don't want to frost them I'd try a different recipe. Peel the zucchini if you don't want anyone wondering what the green stuff is. I would make these again.

Roasted Butternut Squash Soup

I liked the tip of sauteing the squash, onion, celery, and carrots together. That's what I did and it turned out great. I used about half of a large amber cup squash. I'd say it was closer to 4 cups altogether. I also used a whole sweet onion and I had to use boullion because I ran out of broth. I put in a few dashes of "salt exotica" which is basically coriander, ginger, turmeric and garlic. It was fabulous!

German Apple Pancake

I'm giving this 5 stars because it exceeded my expectations. After reading some reviews I was worried it would be too custardy. I added 1/4 cup extra flour to the batter. I also added 1/2 teaspoon cinnamon and double sugar to the batter. I omitted the nutmeg and doubled the cinnamon in the apples. I baked in a 10 inch skillet and had to add 10 minutes longer at 375 because it was still liquid in the center. The end result came out delicious. The family actually liked it too, which is unusual :)

Smokin' Scovilles Turkey Chili

I was skeptical about the chocolate but this is great. I do add extra beans, usually pinto and I omit the corn. I'm sure it's excellent as written, I just prefer my chili with a lot of beans. Thank you!

Beer Bread I

There is no more need for the expensive Tastefully Simple mix. I increased the sugar to 1/3 cup and made this according to the TS instructions. Just mix until moistened, about 30 strokes, and spread into 9x5 pan. No need to get your hands in there! Pour 3 Tbs melted butter over the top and bake at 375 for 45 minutes. Perfect! thank you for this

Banana Crumb Muffins

Absolutely scrumptious! I changed the 1/3 cup butter to oil and added vanilla and cinnamon per other reviews. I only had 2 bananas but they were overripe/brown and it was plenty. I'll never make another banana muffin again.

Slow Cooker Turkey Breast

Well, I put this in the crockpot at 9:30 this morning. It's 2:30pm now and the bird is cooked. In fact, internal temp is 190 so I think it's been done for a while. It looks and smells delicious. I had to put it on warm, hope it's still good in 3 1/2 hours for dinner! I added 1/2cup water at the beginning because I was doubting leaving it in there dry. Totally unnecessary - don't do it! There's practically turkey soup in there now from all the turkey juices.

Paella I

This is very good, not perfect, but good. Arborio rice seems like a bad choice because it is too creamy. I used 1 1/2 cups medium grain rice and it was still a bit creamy. I think next time I will start out with only 3 cups broth. I also added the zest of one lemon. Don't skimp on the saffron - it's what makes it - and please don't substitute turmeric!

Classic Spanish Sangria

I lost my old Sangria recipe so I made this one in a pinch. It's ok but it needed major tweaking. I used less sugar than it called for and I had to add some extra wine, oj, triple sec and mineral water before it tasted right. For some reason it was terrible the next day. I think the traditional recipe with brandy is a better bet.

White Chocolate and Cranberry Cookies

I have been making these every year at xmas since I found the recipe here. They are amazing! Everyone loves them. I would have to say DO NOT substitute vanilla, the result will be a totally different cookie. Go to the liquor store and just get a tiny airplane bottle of brandy for $1. It's well worth the trip. Also, these have a shelf life of about 2 days and then they get dry. Don't make them too far in advance unless you are going to freeze them right away.

Swiss Cheese Potato Pancakes

Awesome, even my kids love these. I usually double the cheese. You can shred the potatoes in advance and keep them in a bowl of water in the fridge until you are ready. To get all the water out of the potatoes I run them through the salad spinner!

Better Than Pumpkin Pie

I'm rating this 4 stars as is because I didn't alter the spices but they could use some tweaking. I made 1 1/2 the amount of filling based on previous reviews. It was more than I could fit in the pie shell but I think as is, the recipe would not have made enough filling. The spices in the pie are very subtle. I would double them all next time. I also had to cook the pie 1 hour and 10 minutes. It definitely tastes like pumpkin pie, no one would ever know the difference.

Stracciatella II

Followed this recipe to the letter. It's just ok for the amount of work. I'd like to rate it 3 1/2 stars if I could. I would definitely double or triple the lemaon next time if I made it again, I doubt I would make it again though. It's just ok.

Love, love, love this! I have been looking for a recipe like this every since I had it as an appetizer in a gourmet restaurant. This was just like it except they had thinly sliced grilled/roasted potatoes on theirs so I added that. PERFECT!!

Seattle Dutch Babies

I'm giving this a 4 only because it was easy and baked up nice (at a higher temp as suggested by others). However, this was very eggy. I've had Dutch Babies in restaurants before and it's always more like a big pancake/pastry. This is like a sweet omelet.

Sorry but this is disgusting. Tastes like pure butter and looks all curdled. I followed the directions perfectly. Next time I won't be so lazy when I run out of confectioner's sugar.

Stephen's Chocolate Chip Cookies

That must be some cooking school! This is the best chocolate chip cookie recipe, hands down. I have made so many over the years and they are always flat and/or cakelike. These were perfect. My husband said they're better than Mrs. Field's. I replaced the almonds with hazelnuts and used 1 cup milk choc chips and 1 cup semi-sweet (no white chocolate) just for personal preference.
