Ginger Glazed Mahi Mahi
FANTASTIC!!! i baked the fish...then simmered the extra marinade sauce and used it as a glaze to pour over fish and rice. I will double the sauce next was delish! served over jasmin rice and a sauted veggie medley of onions, mushrooms and sugarsnap peas. YUm!

Overnight Blueberry French Toast
i took others reviews and made quite a few changes. 1) used 2 loafs french bread. 2) used 12oz cream cheese. 3) i whipped the cream cheese with a few dashes nutmeg, cinnamon...a little milk and few Tbl. powdered sugar. then daloped it on the bread. 4) 10 eggs instead of 12. 5)i doubled the "sauce" recipe (but didn't need to..lots left over even after drizzling over the top). also cut the sugar down to 1.5c. 6) dusted the top with cinnamon before baking. mmm. It was gobbled up at the brunch today. i will do everything the same next time except doubling the sauce!

Hash Brown Casserole II
This was a huge hit at our fall potluck! it was the first thing to go! I took the advice from readers and I used a can of the Campbells chicken and mushroom. and cut the butter down. I also skipped the step of sauteing the cornflakes. They they turned out a bit soggy...even after baking uncovered for 15min. (but i'm not sure if that's because i covered the dish right away out of the oven to transport). so next time i might just add them at the end.
