I changed things up a little, but it was really good! I doubled the garlic, added chopped red pepper, sliced carrots, & frozen peas after I added all of the listed ingredients. After cooking down a little while, it still felt like it was missing some depth, so I sprinkled in some turmeric & cardamom. I didn't add a whole lot (sorry, not a measurer), but it probably amounted to about 1/4 tsp of each. Then, I warmed about 1/4 tsp saffron threads in a pan & added a Tbsp of hot water. I soaked it for about 15 minutes and then added the liquid. I simmered it about a half hour to let the flavors blend. Boy did that make a difference! Yummy.
