Cod with Italian Crumb Topping

Very yummy and satisfying. I figured that the topping would need more oil to come together, but I whisked it for a minute or two and it was perfect. The topping ended up a little crunchy, which I liked.

Chicken With Mushrooms

This has become a big favourite very fast. I love mushrooms, so I use double the amount. To my mind, sauteing the mushrooms is overkill. 30-35 minutes in the oven is more than enough time to cook them. Some other preferences: 1)swiss or monterey jack cheese are also fab 2)I like grated cheese instead of slices - a bonus: you can get away with using a bit less, for those who are in slimming mode 3)try apple cider or 1/2 white wine 1/2 broth 4)when I'm in a rush, I don't fry the chicken - just put it in the dish and bake; it's not crispy, but quicker and fewer dishes to clean 5)I skip the egg - just moisten the chicken with water Shake'n'Bake style 6)thyme is pretty much mandatory with mushrooms - I make sure the breadcrumbs have thyme mixed in as well as other stuff 7)green beans go nicely with this .... Everyone should try this recipe!

Eileen's Meatloaf

Gross. Sorry, but I didn't like this at all. It was salty, dry, and the cheese ended up giving it an "off" smell. There are so many interesting meatloaf recipes out there - this isn't one of them.

Green Bean and Mushroom Medley

A nice twist on boiled beans and carrots. Like many people, I cut the all the salts by half. Next time I'll cut the cooking time a bit also, since I found the veggies a little overcooked for my taste.

Mouth Watering Medley

Mouth watering indeed! And suitable for breakfast, brunch, lunch, or even a light dinner. My husband prefers double (or more) of the ham (with an extra egg or two to keep it moist). The only problem I had was that the potatoes stuck to the bottom of the pan. Maybe I overcooked a tad. Maybe lightly greasing the pan is not enough. I'll make this again.

Holiday Chicken Salad

Very nice. I used walnuts, but I think pecans are probably better for this recipe. I plan to make this again after Thanksgiving to see how it does as a turkey salad.

Skillet Herbed Chicken with Mustard

An excellent, quick and easy recipe. Obviously, it's not for those who don't like the licorice-y taste of tarragon. Use fresh herbs if you have them. Divine.

Glazed Pork Chop

I loved this recipe! I used whole grain dijon mustard and it made a fabulous sauce. However, butterfly pork chops are rather thin and can easily be overcooked, which is what happened tonight - not fabulous. I think the best way to do this recipe would be on the stovetop. I will update this review when I've tried it out.

Baked Mushroom Rice

This dish tastes good, but the recipe as is seems to require some adjustments, hence the lower rating. It's been said before: more liquid! A 2 to 1 ratio of liquid to (normal not minute) rice is right on. (Try using some white wine! Yum!) I also reduced the heat to about 350 and kept the casserole covered. Saute-ing the onion and mushrooms together in the butter first was also a good suggestion I followed. I doubled the amount of mushrooms, 'cause I love 'em. A keeper.

Rempel Family Meatloaf

After reading the comments about this recipe I knew it was a good one, but I had a few reservations. So… I sifted out the onion soup mix as Connie suggested, to avoid too much salt. I mixed everything together very well and let the meatloaf rest a few minutes after baking, to avoid crumbling. The result? DELICIOUS! It has a sweet, mild oniony taste and really fills you up. I'll make it again.

Cantaloupe Salad

This is a terrific salad! Easy to make and yummy. I really like the combination of sweet and savoury tastes. I think prosciutto would be nice instead of the bacon when you don't feel like frying. In my small town I had trouble finding poppy seed dressing. I eventually found one by Renee's, which was good. The only other offering was Kraft Creamy Poppyseed, which looked a bit too creamy for this. I'd be interested to know what other people used. Great recipe Donna!
