Korean BBQ Short Ribs (Gal-Bi)

Reviewed: Apr. 5, 2014
delish! substituted sprite for water. 1/2 low sodium soy sauce and 1/2 coconut soy sauce. dumped it all in the crockpot and simmered on low for 8hrs. was soooo good. meat fell off the bones. ate with egg noodles. leftovers went into the fridge and peeled off the fat the next day. chopped the meat up, removed the bones and ate again over fried rice. can't wait to make it again for company

Waikiki Meatballs

Reviewed: Apr. 7, 2011
loved this. soooo easy to do when you use boxed meatballs and a flavourwave. dinner is ready in 25 minutes. no green peppers, used pineapple tidbits and dumped it all into a saucepan, boiled it and added the meatballs. couldn't be easier served over pasta.

Chicken Breasts Pierre

really enjoyed this. the only chage i made was to leave out the celery seed as i never have any, and used bone in chicken breasts as that is what i had on hand.

Brown Family's Favorite Pumpkin Pie

Reviewed: Oct. 12, 2009
It was pretty good. I did like that it was very pumpkiny and not terribly sweet. I am going to add some cloves next time to bump up the spice. It was a very nice and fluffy pie and not dense like most. I didn't add the streusel.

Dee's Roast Pork for Tacos

Reviewed: Sep. 25, 2009
the only change i made to this was in blending green jalepeno peppers, instead of green chilies, with the rest of the ingredients, and then rubbing the pork. i cooked it in the oven at 300° for 4 hours. delish

Roasted Potatoes with Tomatoes, Basil, and Garlic

Reviewed: Jul. 17, 2009
i don't generally measure. some potatoes, fresh grape or cherry tomatoes cut in half, some dried basil, jarred garlic, evoo or sunflower oil, fresh rosemary, some chopped onion and salt and cracked black pepper. give it a good toss with your hands, cover it and throw it in the oven on 425 until the potatoes are cooked through. easy peesy

Salisbury Steak

Reviewed: Jul. 17, 2009
i could not find french onion soup so i just bought a packet of onion soup from walmart (i'm cheap). i added 1/2 of the dry mix to the beef mixture and the other 1/2 to 4 cups of water along with a packet of beef vegetable soup mix (it has noodles) and cooked it. when the soup was cooked i added 1/4 of it to the beef mixture. i added the rest of the cooked soup to the gravy mix and also a tin of mushrooms. (i also doubled everything but the ketchup like other reviewers mentioned and deleted the salt) the beef i made into patties and cooked them until the tops were browned (the inside was still pink) on the george foreman grill and then added them to the gravy mix and cooked it on medium for 20 minutes. was delish and am adding it to my dinner rotation.

Apple Enchilada Dessert

Reviewed: Apr. 22, 2009
took other reviewers advice and: used fresh apple mixture; apples, sugar cinnamon, touch of nutmeg and flour and cream cheese mixture. but i am lazy and i just mixed everything together. it was verrry runny. made the caramel mixture with less water than in the recipe and let it thicken up longer than the 3 mins. put the enchiladas together (did i mention it was verrry runny) seam side down and poured the remaining apple mixture over top, followed by the caramel mixture. into a 400deg oven for 30-35mins and done. not runny at all. yum! served it with real whipped cream and vanilla ice cream. a great change from apple pie.

Jamaican Oxtail with Broad Beans

Reviewed: Apr. 22, 2009
great recipe. i left out the scotch bonnet (don't think it needs the heat)and added a touch of browning and bbq sauce. did it in the crockpot on high for 4 hours and finished it in the oven for 1.5hrs, added canned broad beans (next time I will just add dried in the beginning) with added baby carrots. along with my homemade rice and peas this was a keeper.

i took other reviews to heart and sprinkled the buttered bread with a touch of brown sugar and cinnamon, piled on the apples 1/2 a medium granny smith and then more brown sugar and cinnamon. under the broiler on low for 5 minutes and delish. bread wasn't soggy, just not toasted, but i still liked it. would be great with a touch of whipped cream on top. mmmm

Apple Pie by Grandma Ople

Reviewed: Dec. 28, 2008
Delish. I am eating the last piece right now. I made this with the suggestions of others and added nutmeg and cinnamon to the liquid mixture. I used a premade frozen pie crust (I CANNOT make crust to save my life),and put the apples (4 would have been plenty) in the crust and topped that with the mixture and then finished it with another crust on top with knife slits for the air to escape. After baking for 50mins at 350degrees. I made another small liquid mixture and brushed that over the top to bake for an additional 5 minutes. (Be sure to put foil under the pan because this mixture will drip.) Wonderful and as an added bonus my niece who hates apple pie ate two pieces and said it was the best pie she ever had.

Mushroom Risotto

Reviewed: Oct. 17, 2008
I have always wanted to make risotto and am glad I started with this recipe. I took some previous posters advice and thought 4 servings (which apparently actually feeds 6 or more) would make to much for our family of 4 so I scaled it back to 3 servings and it was perfect for a 13 and 16 year old and 2 parents. I used aborio rice, half & half, skim milk and 1 can of chicken stock and the rest plain water. Although the recipe called for 3/4 cup of parmesan I used 1/4 cup of parmesan and 1/4 cup of romano. Mine looks exactly like the risotto you get at a restaurant, not like the soupy consistency in the picture. The kids said it tasted like 'more'.
